Meal Prep & Ingredient Swaps

Classic Beef Pot Roast: Serve with mashed potatoes, cheesy scalloped potatoes, funeral potatoes, and some roasted veggies. The leftovers are even better than the first day! Shred the meat and use it for sandwiches, tacos, or soups.

Peruvian Arroz con Pollo: Long-grain rice, like Basmati or jasmine, works best because it stays light and fluffy while soaking up all the flavors. Bone-in, skin-on chicken thighs will give the dish even more flavor. Just brown them in the pan first, remove them while the rice cooks, then add them back in before baking.

Creamy Pesto Pasta: Great with a side of garlic bread. Grilled chicken, shrimp, or even tofu make excellent additions to this creamy pasta dish. Store-bought pesto works perfectly but you can use homemade pesto if you prefer.

Easy Teriyaki Meatballs: If you prefer chicken, turkey, or pork, you can swap out the beef. Serve them over steamed rice or noodles with sliced cucumbers, shredded cabbage, and extra sauce.

Potato Sausage Skillet: Try turkey kielbasa, andouille, or a plant-based version. Yukon gold, red, or russet potatoes all work great.

German Black Forest Cake: Frozen cherries work well in this recipe, especially if they’re thawed and pitted. Just remember to drain any excess liquid to prevent the filling from becoming too watery.
