This recipe combines my favorite recipe for Ultimate Decadent Gluten Free Chocolate Cake with generous layers of Gluten Free graham cracker crumbs, a caress of Dairy Free chocolate ganache, and a sweeping cloud of toasted marshmallow frosting. Remember, this is the ultimate!

The Flavor in the Details

This over the top Ultimate Gluten Free Toasted S’mores Cake is all about the details. All of the individual components come together to give you that s’mores experience but in an elevated and even more indulgent way.

Each layer of this cake builds in flavor. Let’s slice right in and start with the chocolate cake itself. This cake gets a double dose of chocolate boosting flavor from chocolate’s best friend, coffee. Both freshly brewed coffee and a little espresso powder enhance the deep flavors of the cocoa powder.

The depth of chocolate flavor isn’t the only thing getting a boost. Dairy Free Greek yogurt ensures that each and every bite is tender and moist.

What’s the Ultimate Gluten Free Toasted S’mores Cake without graham crackers? Gluten Free graham crackers bring their distinct buttery flavor and also texture. To balance the crunch, and bring even more luxuriousness, chocolate ganache gets cascaded between the layers. When it’s the ultimate, you need double the chocolate.

Last, but certainly not least, the main event. Toasted marshmallow frosting. This fluffy cream cloud of whipped frosting confection won’t all make it to the cake. I promise you you’re going to lick the spoon.

Baking The Ultimate Gluten Free Toasted S’mores Cake

Get out your kitchen torch and let’s fire up this cake! I’m going to break down the three major components of baking this cake.

First, let’s start with the cake itself. The most important rule when it comes to mixing your cakes is that you want to be gentle. Always mix until your ingredients are just combined. This will give you that tender bite that will have you going back for more.

Also make sure your cake is completely cool before moving on to building your layers. You want those peaks and swirls of toasted marshmallow frosting to stand out, not slowly melt off.

The next important component of this cake is the Dairy Free chocolate ganache. I am using dark chocolate for this recipe as the bitterness helps balance the sweet. You can melt your chocolate in the microwave for this, but melt it in intervals. 15-20 seconds at a time, mix and stir until just melted and then add in your cream.

The crowning finish of the Ultimate Gluten Free Toasted S’mores Cake is definitely the frosting. It begins by creating a double boiler. Bring a pot of water to just a boil and place a glass bowl over the top. You want to make sure the water never touches the bottom of the bowl. You are going to continually whisk the egg whites, sugar, and cream of tarter until frothy, approximately five minutes. This will gently cook the eggs.

From there the mixture is poured into your mixer. The mixer will do all of the work. You’re looking for a light, fluffy consistency and stiff peaks. This means that when you take a spoon to it the frosting holds its shape.

Whether or not you use a kitchen torch to toast the outside of the frosting is completely up to you. But who doesn’t like to play with a little fire?

Top Tip

When you create a double boiler, it allows you to cook or melt something at a gentle heat without worry of over cooking it. This is useful for making custards, meringues, melting chocolate, etc. The best part is you don’t need any special tools.

Armed with a pot of simmering water and a glass bowl, you can easily create a double boiler at home. The key is to make sure the water never touches the bottom of the bowl. You want the steam created from the seal to do all of the work.

Ingredients

Gluten Free Chocolate Cake

  • 2 cups 1.1 Gluten Free Flour
  • 1 cup cocoa powder
  • 2 cups sugar
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 5 oz Dairy Free unsweetened Greek yogurt
  • 1 tsp kosher salt
  • 1/2 cup vegetable oil
  • 1 tsp espresso powder
  • 1 cup freshly brewed coffee
  • 2 eggs
  • 2 tsp vanilla extract

Toasted Marshmallow Frosting

Dark Chocolate Ganache

  • 1 1/2 cups Dairy Free dark chocolate ganache
  • 1/2 cup Dairy Free heavy cream

S'mores Cake

  • 1 cup Gluten Free graham crackers, crushed

Instructions

Gluten Free Chocolate Cake

  • Preheat oven to 350 degrees. Spray 2 8" cake pans with nonstick baking spray and set aside.
  • In a mixing bowl add eggs and sugar and beat on high for 3 minutes.
  • Add the vanilla, oil, yogurt, and espresso powder and mix to combine.
  • Add in the dry ingredients and gently mix to combine. Don't over mix. Add the coffee and mix.
  • Divide the batter between the two cake pans. Bake for 35-45 minutes or until a toothpick comes out clean. Allow to fully cool

Toasted Marshmallow Frosting

  • Create a double boiler by bringing a pot of water to a boil.
  • Place egg whites, sugar, and cream of tarter into a glass bowl and fit over the top of the pot, making sure the water never touches the bottom.
  • Continually whisk the mixture until it becomes frothy, 5 minutes.
  • Pour the mixture into a bowl and add the toasted marshmallow flavoring. Mix on high for approximately 5 minutes or until the mixture becomes thick and holds its shape.

Dark Chocolate Ganache

  • Melt the chocolate in the microwave. Work in 15-20 second intervals, stirring between heating, until chocolate is fully melted. Be careful not to over heat.
  • Stir in the cream until smooth.

S'mores Cake

  • Place half of the graham cracker crumbs on the first layer of cake.
  • Drizzle half of the chocolate ganache over the crumbs. Top with some of the marshmallow frosting.
  • Add the second layer of cake. Top with the remaining graham cracker crumbs and chocolate ganache.
  • Cover the cake in the toasted marshmallow frosting.
  • If desired, you can use a kitchen torch to toast the outside of the frosting.
  • Enjoy!

    Made this for book club. 6 ladies and not a crumb left. I must admit I used King Arthur gluten free chocolate cake mix as I was pressed for time. Otherwise I followed exactly.
