  • 2 ½ cups GF graham crackers ground fine
  • *Either instant chocolate pudding made according to directions or chocolate pastry cream recipe below
  • 2 cups marshmallows
  • 8 tbsp butter melted

Chocolate Pastry Cream

  • 2 cups oat Milk
  • 3 egg yolks
  • 1 egg
  • 1 cup sugar
  • 1 tsp vanilla paste
  • pinch salt
  • 4 tbsp cornstarch
  • 1 cup dark chocolate or semi-sweet I used Dairy Free
  • 2 tbsp cocoa powder

Instructions

Making the S’mores Pie

  • This will make a 9″ pie. Add the graham cracker crumbs to the pie dish, drizzle the melted butter on top.
  • Mix and press into the pie dish.
  • Add the chocolate pudding or chocolate pastry cream.
  • Then top with marshmallows and toast with a torch lightly. Enjoy!

Making the Chocolate Pastry Cream

  • Add the oat milk and vanilla and place over medium heat.
  • Bring to a boil. In a separate bowl mix together the eggs, sugar, salt, and cornstarch.
  • Once the milk comes to a boil, reduce the heat to low.
  • Whisk one spoonful of the milk into the egg mixture.
  • Whisk quickly to temper the eggs.
  • Add another spoonful, while you whisk.
  • Then add the egg mixture to the pot with the milk.
  • Whisk until thick.
  • Add both chocolates to a glass bowl, pour the pastry cream in the bowl and mix until the chocolate is melted.
  • Cover and place in the fridge to chill completely.
