HOW TO MAKE SLOW ROASTED BEEF SHORT RIBS WITH A MUSHROOM SAUCE

Ingredients

Slow Roasted Beef Short Ribs

  • 2-3 lbs D'artagnan boneless short ribs
  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 lb carrots ends removed and largely chopped
  • 2 cups celery largely chopped
  • 2 large garlic cloves minced
  • 3 tsp kosher salt
  • 1 ½ tsp black pepper
  • 4 cups beef stock
  • 1 cup water possibly 1 extra, see instructions
  • 3 bay leaves
  • ½ cup red wine
  • 3 sprigs fresh rosemary
  • 5 sprigs thyme large

Mushroom Sauce

  • 8 oz button mushrooms
  • ½ tsp thyme
  • 1 ½ cups heavy cream
  • pinch of salt and pepper
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 325℉.
  • Place a large Dutch oven on the stove over med/high heat and add the olive oil.
  • Season the short ribs with 3/4 tsp black pepper and 1 1/2 tsp kosher salt.
  • Sear each side of the short ribs and remove.
  • Reduce the heat to med and add the onion and celery.
  • Cook until the onion is translucent, add the wine and cook the wine down for 10 minutes.
  • Add the rest of the ingredients and place the short ribs back in the pot.
  • The liquids should cover the short ribs, if they don’t add another cup of water.
  • Bring to a boil, cover and place in the oven.
  • Cook for 3-5 hrs. or until fork tender.
  • Remove & serve with your favorite grain.

Mushroom Sauce

  • Add the mushrooms, olive oil, salt, pepper and thyme to a baking dish. 
  • Bake at 375℉ for 10 minutes.
  • Remove and add the mushrooms. Add the ingredients to a blender and blend until smooth.
