  • 16 oz cream cheese or mascarpone, room temperature
  • 2 cups heavy cream
  • cup light brown sugar
  • cup granulated sugar
  • 2 ½ tsp pumpkin spice seasoning
  • 15 oz pumpkin purée
  • 2 7 oz Ladyfinger, packages
  • 2 cups cold coffee
  • 8 oz whipped topping
  • ½ cup chocolate shavings

Instructions
 

  • In a large mixing bowl, combine the pumpkin puree and room-temperature cream cheese (or mascarpone). Mix until smooth.
  • Add the light brown sugar, granulated sugar, and pumpkin seasoning to the mixture. Stir until fully incorporated.
  • Pour the heavy cream into the mixture. Start mixing on low speed to avoid splashing, then gradually increase to high speed until the mixture is thick and fluffy. Set aside.
  • Pour the cooled coffee into a shallow bowl. Quickly dip each ladyfinger into the coffee, ensuring they are coated but not soaked, to prevent sogginess.
  • Arrange a layer of dipped ladyfingers at the bottom of the 9x13x3” deep dish. Spread half of the pumpkin filling over the ladyfingers. Add another layer of dipped ladyfingers on top of the filling.  Spread the remaining pumpkin filling over the second layer of ladyfingers.
  • Cover the dish and refrigerate for at least 6 hours to allow the tiramisu to set.
  • Before serving, spread the whipped topping evenly over the tiramisu and sprinkle with chocolate shavings. Enjoy!
