Ingredients

  • 3 ¾ cup gluten free bread flour
  • 1 tsp baking powder
  • 2 tsp kosher salt
  • 2 tsp instant yeast
  • 1 cup hot water 110 degrees
  • 1 cup unflavored sparkling water
  • 3 tbsp olive oil + 2 tbsp olive oil
  • 2 tsp honey
  • 1 tsp oregano

Topping

  • 1/2 cup parmesan cheese
  • 1/4 tsp basil
  • 1/2 tsp oregano
  • 2 tbsp olive oil
  • 1 1.2 teaspoons Fleur De Sal

Instructions

  • In a small bowl add the hot water, honey and yeast.
  • Mix for a few seconds and set aside for 5 minutes to bubble.
  • In a large mixing bowl add the flour, baking powder, salt and mix well.
  • Create a little well in the center of the flour and add 3 tbsp of olive oil, sparkling water and yeast mixture.
  • Mix until incorporated. The dough will be very sticky and lumpy.
  • Using 2 tbsp of olive oil, oil a 9×13 metal baking dish with 2” sides.
  • Then line with parchment paper, its ok to come up on the two sides. It will make it easier to pull the bread out.
  • Place the dough in the pan and spread it out.
  • Cover with saran wrap, top with a towel and set aside until it triples inside.

Topping:

  • Once the dough has risen, drizzle olive oil on top, sprinkle the seasoning, salt and parmesan cheese on top.
  • Bake at 425 degrees for 25-30 minutes until golden brown.
  • Remove and allow to cool completely before cutting. Enjoy!
