Ingredients You Need to Make Banana Bread Pop Tarts

For the Banana Bread Filling:

  • 2 ripe medium bananas
  • 1 tsp vanilla
  • 1/8 cup sugar
  • 1/4 tsp cinnamon
  • 1/16 tsp allspice

For the Frosting:

  • 2 tsp creamy peanut butter
  • 1 tbsp milk (may need 1 more depending on PB being used)
  • 1 tsp vanilla extract
  • 1 1/4 cup powdered sugar

For the Pie Crust:

  • 3 cups 1.1 GF flour
  • 1 tsp baking powder
  • ¾ tsp kosher salt
  • 6 tbsp sparkling water
  • ¾ cup sour cream
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 16 tbsp cold butter, cubed
  • *egg wash for bruising the top of the pie crust (1 egg+2 tbsp water mixed)
  • *2 tsp sugar for sprinkling on top of the crust

How to Make Banana Bread Pop Tarts with Peanut Butter Frosting

For The Filling:

  1. Preheat the oven to 350 degrees. 
  2.  Mash the bananas.  
  3. Add the rest of the ingredients and mix until smooth.  
  4. Double pie crust recipe below.  
  5. I like to roll each crust on the parchment paper to make it easier for  transport. Go to the second part to complete the recipe. 

For the Double Pie Crust:

  1. In a large bowl add the dry ingredients and mix well.  
  2. Add the butter and sour cream and either using your hands or a pastry cutter work the dough quickly. We don’t want to break up the butter a ton. For the pie crust to be flakey we want butter pockets. They should be pea size when done working it.  
  3. Add the water to the dough and with your hands work the dough quickly until incorporated.  
  4. Put into plastic wrap and place in the fridge for 2 hrs. 
  5.  Remove, slice the dough in half and lightly flour the work surface.  
  6. Quickly work the dough to make it more pliable.  
  7. Use flour sparingly (we don’t want to dry the dough). 
  8.  Roll out each crust to 9×12 and cut into a rectangle.  
  9. Add one crust that is on parchment paper to a cookie sheet.  
  10. Spread the banana mix all around up to 1″ from sides.  
  11. Top with the other crust, crimp the sides, bake for 25-30 minutes until the crust is slightly 
    golden brown.  
  12. Remove, allow to cool. 
  13. While cooling, mix all the frosting ingredients together until smooth and creamy.  
  14. Once cooled, top the pop tart with the frosting.  
  15. Now your ready to slice and enjoy.

Yes, All-Purpose Flour can be used. Use the same amount that is listed in the ingredients, but swap with all purpose.
