Some mornings you just crave all of the breakfast foods. Pancakes, sausage, eggs, no decision required! This quick and easy breakfast sandwich is perfect for a lazy Sunday, especially after a late Saturday night. It’s also a fun way to make a weekday a little more exciting.

Skip the Buns

Why make biscuits or pull out a package of buns when you can have pancakes cradling your sandwich filling? These Gluten Free pancakes utilize your favorite pancake mix. Think of these as a McGriddle you can not only feel good about, but there’s no need to leave the house!

For this recipe I am using Josie’s Best The Pancake. All of Josie’s best mixes are free from the top 8 major allergens. They are also non-GMO.

Building the Ultimate Pancake Breakfast Sandwich with Sausage

When it comes to something being the ultimate, you want all of the flavors and toppings. This pancake sandwich packs sweet and savory, soft and a little crunchy, and warm and gooey all in a bite.

Let’s break down all of the tasty and fun components to this breakfast extravaganza. We’ll start with the pillowy soft pancakes holding it all together.

You are going to make the recipe on your favorite pancake mix, using your desired milk along with the addition of two ingredients that make these special. To bring texture, flavor, and that naturally toothsome crunch, you’re going to add one tablespoon of cornmeal to each batch. In addition, since we’re going for that McGriddle flavor you’re also going to add two tablespoons of maple syrup. I promised you a little sweet after all!

Next up, the sausage. Use your favorite breakfast sausage here. If you want double the maple flavor go with maple. Like things spicy? Pick a spicy sausage. Even sage sausage would work. Cook up what you and your family love. Turkey or chicken sausage would even be great options.

Once your sausage is cooked, golden, and a little crispy, add in those eggs. You can’t have a breakfast sandwich without eggs. Take your time scrambling them with your heat on medium-low. You want those soft, decadent, comforting bites.

Last, but in no way least because it’s the ooey and gooey crowing glory, pick your favorite cheese. Think of these as design your own breakfast sandwiches.

Pancake Breakfast Sandwich with Sausage

Ingredients

Pancakes

Breakfast Sandwich

  • 1 lbs ground breakfast sausage
  • 8 eggs, whisked
  • 2 slices cheese per sandwich
  • maple syrup for serving.

Instructions

  • Prepare pancake mix according to package with the addition of the cornmeal and maple syrup.
  • Make pancakes and set aside.
  • In a large skillet on medium heat brown sausage until golden a little crisp.
  • Add eggs to sausage and scramble until light and fluffy.
  • To build breakfast sandwich place a pancake on a plate and top with cheese, the egg/sausage mixture, and another slice of cheese. Top with a pancake and drizzle with maple syrup. Enjoy!
