Who else loves zucchini season? One year our friends grew zucchini and gave us over a dozen each week so I quickly played around with zucchini recipes. This zucchini bread is one of my favorites! The streusel topping adds a great crisp. I used @xobakingco gluten free zucchini bread mix. I’m obsessed! They use great quality ingredients and are a pantry staple!

Streusel Ingredients

  • 1/3 cup butter melted
  • 2 tbsp brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup 1.1 GF flour

Glaze Ingredients

  • 2 cups powdered sugar
  • 1 tsp lemon juice
  • 2 tbsp milk

Prepare Zucchini Bread

  • Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.
  • In a mixing bowl, prepare the zucchini bread mix according to the package directions.
  • Add 1 tsp of lemon zest to the batter and mix well.
  • Pour the batter into the prepared loaf pan.

Prepare Streusel Topping

  • In a separate bowl, combine 1/3 cup melted butter, 2 tbsp brown sugar, 1/4 cup granulated sugar, and 1/2 cup 1.1 GF flour.
