Beef and Broccoli Stir Fry: Swap out or add veggies and that you prefer. Onions, mushrooms, edamame, carrots, and green beans would all be good additions. And feel free to use chicken or even ground meat instead of stir fry beef.

Southwestern Chicken Tacos Recipe: Enhance your tacos with sliced avocado or guacamole, and serve with your favorite beans, rice, or salad.

Shrimp Cucumber Corn Salad: Frozen shrimp is cheaper than fresh, so I keep a bag in the freezer for when I need it. To defrost, simply run cool water directly into the bag of frozen shrimp, let sit for a couple minutes, drain, and repeat until the shrimp have thawed.

Marry Me Chicken Rice: Use brown rice, quinoa, or even orzo instead of white rice, just be sure to adjust the the cooking time and liquid as necessary. Substitute chicken with turkey breasts or pork tenderloin for a different taste.

BBQ Hawaiian Chicken Burgers: You can use beef or make it vegetarian with black bean patties.

Banana Pineapple Pudding Cake: If you’re into making things from scratch, you can use my homemade vanilla cake that works just as well as the boxed mix. Just be sure to let the cake cool completely before layering on the toppings so nothing gets runny.
