Gooey marshmallows, melted chocolate, and warm cookies come together in these S’mores Chocolate Chip Cookies, and they hit that campfire nostalgia without leaving the kitchen. Crisp edges, soft centers, and that toasted marshmallow finish make them hard to stop at just one.

The Cookie That Turns Into a Campfire Moment

These cookies start with a rich, classic chocolate chip base that bakes up soft in the center and lightly golden around the edges. A mix of semi-sweet and bitter chocolate chips gives the dough depth, while chopped walnuts add crunch if you want a little contrast.

Here’s how they come together:

Wondering how in the world to get the BEST bake every time? We’ve laid it all out for you.

  • Cream butter and sugars until light and fluffy
  • Mix in the egg and vanilla
  • Add the dry ingredients just until combined
  • Fold in chocolate chips and walnuts
  • Chill the dough so the cookies hold their shape
  • Scoop and bake until lightly golden
  • Cool before assembling the s’mores

Once baked, the cookies become the base for the fun part. Marshmallows get toasted until golden and gooey, then sandwiched between two cookies with a square of chocolate tucked inside. The heat from the marshmallow softens everything just enough to mimic that just-made s’mores texture.

These are best assembled right before serving so the marshmallows stay warm and stretchy. They’re nostalgic and perfect for evenings when you want dessert to feel like a childhood memory.

Frequently Asked Questions

Can I make the cookies gluten-free?

Yes. Use a 1:1 gluten-free flour blend designed for baking. The cookies still bake up soft with crisp edges.

Can I toast the marshmallows without a kitchen torch?

Absolutely. You can toast them on a grill, over a fire pit, or under the oven broiler with close supervision.

Should I assemble the s’mores ahead of time?

It’s best to assemble them just before serving so the marshmallows stay gooey and the cookies don’t soften too much.

Can I skip the walnuts?

Yes. The cookies work perfectly without them if you prefer a smoother texture.

How should I store leftover cookies?

Store baked cookies (without marshmallows) in an airtight container for up to three days. Assemble s’mores fresh when ready to serve.
