Gluten Free S’mores Chocolate Chip Cookies

It’s no secret how much I love s’mores. Whether I’m incorporating the flavors into French toast or giving pancakes a fun new twist, this classic combination of flavors always makes me happy.
A Twist on a Classic
Skip the graham crackers and give your s’mores an update. Gluten Free S’mores Chocolate Chip Cookies takes two of my favorites and combines them into the ultimate treat.
Baking is all about having fun and getting creative in the kitchen. When I started planning on what recipe to create for National Chocolate Chip Day, s’mores just seemed right. There’s something so playful and nostalgic about both a molten chocolate chip cookie, warm from the oven, and also the sticky, ooey, gooey bite of marshmallow.
This recipe combines my favorite double chocolate chip cookies with all of the makings of the ultimate s’mores. Replacing traditional graham crackers with the cookies takes this s’mores experience completely over-the-top.
Chocolate chip cookies are as much about the texture as the flavor. I use both Dairy Free semi-sweet chocolate, and Dairy Free bittersweet chocolate in these cookies. I also love adding walnuts, but that is completely up to you. The slightly higher amount of brown sugar in these cookies gives them that chewier bite, while still having crunch.
You can take these cookies outside with your marshmallows and fire up your grill or firepit to toast the marshmallows, or you can use a kitchen torch. The choice is completely up to you. I love that the cookies can be made ahead of time making these a fun way to end any dinner.
Firing Up Gluten Free S’mores Chocolate Chip Cookies
Get out your kitchen torch or fire up the grill. Let’s have fun giving s’mores the ultimate makeover.
- Pregame! Preheat your oven to 350 degrees. Line baking sheets with parchment paper and set them aside.
- Make sure your Dairy Free butter is room temperature. Add the butter and sugars to a bowl and mix for 5 minutes until it’s light and fluffy.
- Add in the egg and vanilla and mix.
- Finally add your dry ingredients. Mix them together until everything is just incorporated.
- Last, but the most important, mix in your chocolate chips. Don’t be afraid to measure those with your heart.
- Allow the dough to chill for at least an hour in the fridge before using a 2″ scoop to portion them out onto the prepared baking sheets.
- Bake your cookies for 10-13 minutes until they are lightly golden brown. Allow them to cool on baking racks.
- To build your Gluten Free S’mores Chocolate Chip Cookies, place three marshmallows on the bottom side of a cookie. You can either roast them prior on the grill or fire pit, or toast them directly on the cookie with a kitchen torch.
- Add a piece of Dairy Free dark chocolate and top with another cookie. Playing with food has never been so delicious!

Gluten Free S’mores Chocolate Chip Cookies

Ingredients
Chocolate Chip Cookies
- 1/2 cup Dairy Free unsalted butter, room temperature
- 1/2 cup brown sugar
- 1/3 cup sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1 1/2 cups Gluten Free 1.1 flour
- 2 tsp arrowroot powder
- 1 tsp baking soda
- 1 cup Dairy Free semi sweet chocolate chips
- 1 cup Dairy Free bitter chocolate chips
- 1/2 cup walnuts, chopped optional
S'mores
- large marshmallows
- Dairy Free chocolate bar, your favorite
Instructions
Chocolate Chip Cookies
- Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside.
- Add the butter and sugar to a mixing bowl and mix on high for 5 minutes. The mixture should become light and fluffy.
- Add in the egg and vanilla and mix.
- Add the dry ingredients and mix until just combined. Be careful not to over mix.
- Fold in the chocolate chips and walnuts if adding.
- Allow the dough to refrigerate for at least an hour. It can be refrigerated overnight.
- Use a 2" scoop to portion out the cookie dough onto the prepared baking sheets.
- Bake the cookies for 10-13 minutes until they are lightly golden brown.
- Allow them to cool on baking racks.
S'mores
- Toast your marshmallows your preferred way. I used a kitchen torch but you can toast them on the grill or over a firepit.
- Add toasted marshmallows to a chocolate chip cookie along with a piece of chocolate.
- Top with a second cookie.
- Enjoy!
