    I love having quick and easy recipes perfect for dinner in a hurry, such as Gluten Free Ratatouille Pasta with Ground Beef. Other than the rice, this is completely a one pot meal that comes together in about 30 minutes. Taking pantry staples, this dish is both comforting and protein packed.

    Using favorite pantry and fridge staples helps make Gluten Free Red Beans and Rice with Ground Beef a quick and easy comfort dish I always feel good about serving. This also makes for tasty leftovers that are ideal for meal prep.

    Red beans and rice is a classic Creole dish traditionally made on Mondays. It would simmer away all day as the dried beans softened and the sauce thickened. Infused with Cajun spices and the fresh flavors of the trinity, onions, celery, bell pepper, and garlic, it just deepens in flavor the longer it cooks.

    This recipe takes all of the classic flavors and updates it in a weeknight friendly way. Canned red beans make this dish come together in well under an hour.

    How to Make Gluten Free Red Beans and Rice with Ground Beef

    If you have 30 minutes and a pot, you can have this delicious and nutritious meal on the table!

    Time needed: 30 minutes.

    Canned red beans and lean ground beef make this a hearty and protein packed dish.

    1. Brown it Up

      Heat a large pot or Dutch oven over medium heat with olive oil. Add the onions and ground beef and cook until the beef is browned, using your spoon to break it up.

    2. Simmer Time

      Add the remaining ingredients and allow the red beans and ground beef to simmer for half an hour. As it cooks the sauce will thicken.

    3. Hot Rice

      While the red beans are simmering, make your rice.

    4. Finishing Touch

      To serve your red beans and ground beef, add a scoop of rice and garnish with fresh parsley.

    • 1 stockpot or Dutch oven

    Ingredients

    • 1 lbs Laura's Lean Ground Beef
    • 3 15 oz cans red beans, drained and rinsed
    • 1 bell pepper, diced large
    • 4 celery ribs, diced
    • 2 garlic cloves, minced
    • 1 tbsp olive oil
    • 3 cups vegetable stock
    • 2 tsp Cajun seasoning
    • 1 ½ tsp kosher salt
    • ½ tsp smoked paprika
    • ½ tsp cumin
    • ½ tsp black pepper
    • 1 bay leaf
    • 6 oz tomato paste
    • Serve with cooked rice, hot sauce, and fresh parsley

    Instructions

    • Heat a large pot or Dutch oven on medium heat with olive oil.
    • Add the ground beef and onions. Use the back of your spoon to break up the ground beef as it cooks.
    • Once the ground beef is just cooked through add the remaining ingredients, stirring to combine.
    • Allow the beans to come toa simmer and cook for 30 minutes, or until the sauce has thickened and the vegetables are tender.
    • Serve with rice, hot sauce, and garnish with parsley.
