Homemade donuts are one of my favorite things to make. The batter comes together quickly and because these are baked in a donut pan, they’re not only healthier, they don’t make the mess of fried donuts.

For this batch of donuts I used chopped up nectarines but you can just as easily use peaches. You want to use whatever looks the best for the maximum amount of sweetness. Not peach season? Don’t worry! You can always defrost frozen peaches for this recipe. Just make sure to pat any excess liquid off.

Now that you have your peaches or nectarines chopped, let’s mix the batter. The only key here is not to over mix. As I recommend with all of my baked goods, you want to mix until your ingredients are just incorporated.

Next up is baking your Gluten Free Peaches and Cream Donuts with Collagen. If you don’t have a donut pan, trust me, get at least one. You will find yourself making every combination of donut, such as my Gluten Free Coconut Granola Coffee Cake Donuts. These donuts bake up in only 15-20 minutes and will become part of your morning ritual.

The last step to these donuts is the glaze. Make sure your donuts are cooled before glazing them. To reinforce that peach flavor as well as add vibrant color, I add 1 tsp of peach flavored gelatin to the glaze. There is also peach gelatin in the donuts themselves.

Gluten Free Peaches and Cream Donuts with Collagen

These peach glazed baked donuts are filled with fresh nectarines and given a boost from collagen powder.

  • 2 donut pans

Ingredients

Peaches and Cream Donuts

  • 5 oz Dairy Free vanilla yogurt
  • 2 nectarines or peaches, diced
  • 1 egg
  • 2 tsp vanilla extract
  • 1/4 cup oat milk
  • 2 tbsp Dairy Free butter
  • 2 cup Gluten Free flour
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • dash of nutmeg
  • 1 cup sugar
  • 1 tsp peach flavored gelatin
  • 3 scoop collagen powder

Peach Glaze

  • 1 tsp peach flavored gelatin
  • 3 cups powdered sugar
  • 3 tbsp oat milk

Instructions

Peaches and Cream Donuts

  • Preheat oven to 350 degrees.
  • Spray 2 donuts pans with nonstick baking spray.
  • Add the eggs, butter, oat milk, and sugar to a bowl and mix on high for 3 minutes.
  • Add the rest of the ingredients and mix until just combined. Don't over mix!
  • Evenly distribute the batter between the donut pans.
  • Bake for 15-20 minutes until the tops are golden.
  • Allow to cool before glazing.

Peach Glaze

  • Mix all of the ingredients together and until smooth and glossy.
  • Drizzle over the top of the donuts. Enjoy!
