Commonly Asked Questions

How do I choose the right figs for this galette?

When selecting figs for your galette, look for ones that are plump, slightly soft, and have a rich color. Fresh figs should smell sweet and earthy. Avoid any that are overly mushy or have blemishes, as they may not hold up well during baking.

Wondering how in the world to get the BEST bake every time? We’ve laid it all out for you.

Can I use a different type of nut butter instead of pistachio cream?

Absolutely! While pistachio cream adds a unique flavor, you can substitute it with almond butter or hazelnut spread for a different twist. Just keep in mind that each nut butter will bring its own flavor profile, so choose one that you enjoy.

What’s the best way to store leftovers?

This rustic tart is so irresistible it won’t last long! However, it can be kept for 2-3 days. Keep it stored in an airtight container either at room temperature or in the refrigerator. You can always gently reheat it in the oven on a low temperature for a few minutes.

Can I make the dough ahead of time?

Yes, you can prepare the pie crust in advance and store it in the fridge. Just make sure to wrap it tightly in plastic wrap. It can stay fresh for a couple of days, so you can have it ready for when you’re ready to assemble the galette.

How do I know when the galette is done baking?

The galette is ready when the crust is lightly golden brown and the figs are bubbling a bit. Keep an eye on it during the last few minutes of baking to ensure it doesn’t over-bake.

Can I freeze the galette?

While it’s best enjoyed fresh, you can freeze the galette after it has cooled. Wrap it tightly in plastic wrap and then in foil before placing it in the freezer. When you’re ready to eat it, allow it to thaw in the fridge and then reheat it in the oven for the best results.

What can I serve with the fig pistachio galette?

This galette pairs beautifully with a scoop of vanilla ice cream or a dollop of whipped cream. A drizzle of honey or a sprinkle of sea salt can also enhance the flavors and make for a delightful dessert!

Notes

Because figs are 80% water, they have a very short shelf life. To keep your figs fresh, make sure that they are thoroughly dry. You can either store them in an airtight container or plastic bag in a cool, dry, dark place, or in the refrigerator. The average life for a fig is only about three days, so plan on baking to show off those gorgeous figs!

I made this last night. It was very easy to throw together and here in Northern California, figs are at their peak. I have a question though. What type of pistachio butter do you use? I used a true nut butter only made with pistachios but the galette came out rather PB&J tasting. It was good, but not very sweet at all. I’m wondering if a pistachio cream would have worked better as they typically contain a bit of sugar. Please let me know your thoughts and product info if possible.

    Thank you! ☺️
