  • 1 cup evaporated milk
  • 1 cup brown sugar
  • 1 tsp vanilla
  • ½ cup unsalted butter
  • 3 egg yolks
  • 2 cups pecans chopped
  • 1 cup coconut flakes.

Instructions
 

Cookies:

  • Preheat the oven to 350 degrees.
  • Line two cookie sheets with parchment paper.
  • Add the sugar and butter to a mixing bowl and mix for 5
minutes.
  • Add the eggs one at a time, then add the vanilla extract.
  • Add the rest of the ingredients and mix until incorporated.
  • Place in the fridge for 1 hr.
  • Remove and scoop equal size cookies onto the
parchment paper.
  • I used a 1 1/2 tbsp scoop. Space 2″ apart.
  • Bake for 10-12 minutes.
  • Remove and let cool on the pan.

Frosting:

  • In a pot add the egg yolks, butter, sugar, and milk.
  • Place over med/low heat, continually stirring.
  • After a few minutes the sauce will start
to thicken.
  • Once it starts to get thick and bubble, stir in the 
vanilla.
  • Pull and set aside to cool. Once cooled add the pecans and
 coconut. Top the cookies. Enjoy!
