Carrot Cake Cookie Ice Cream Sandwiches with Cream Cheese Ice Cream are basically everything I love about carrot cake turned into the most ridiculous frozen dessert. Soft, buttery carrot cake cookies are packed with brown sugar, cinnamon, nutmeg and allspice, then filled with homemade cream cheese ice cream. And because apparently I have no ability to leave well enough alone, I like to add toasted walnuts and a drizzle of white chocolate too.
The cream cheese ice cream is what really makes these different. Instead of putting regular vanilla ice cream between the cookies, we’re making a rich homemade custard ice cream with an entire block of cream cheese. You get that classic carrot cake and cream cheese combination, except cold, creamy and sandwiched between two soft cookies.
They take a little planning because both the cookie dough and ice cream need time to chill, but these are absolutely worth it.

- Make the cream cheese ice cream: Whip the egg yolks and sugar until pale. Gently heat the milk, heavy cream, cream cheese and salt, then slowly temper the egg mixture with the warm cream. Return everything to the pot and cook over low heat, stirring constantly, until it reaches 165°F.
- Chill and churn: Stir in the vanilla and refrigerate the ice cream base until it reaches about 65°F. Churn according to your ice cream maker’s instructions.

- 1 1/4 cups finely grated carrots
- 2 1/2 cups all-purpose flour (or 1:1 gluten free flour)
- 1 cup butter, room temperature
- 1/2 tsp kosher salt
- 1 1/2 tsp vanilla extract
- 1 egg
- 1 egg yolk
- 1 cup light brown sugar, packed
- 1/3 cup granulated sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/8 tsp allspice
- 1/8 tsp nutmeg
Cream Cheese Ice Cream
- 1 1/2 cups heavy cream
- 1 cup whole milk
- 4 egg yolks, room temperature
- 1 cup granulated sugar
- 8 oz cream cheese, room temperature
- 2 tsp vanilla paste or 3 teaspoons vanilla extract
- Pinch of salt
Optional Decorating
- 1 cup white chocolate chips
- 2 cups walnuts, crushed
Instructions
Make the Carrot Cake Cookies
- Add the butter, light brown sugar and granulated sugar to a mixing bowl. Mix on high for 5 minutes.
- Add the egg, egg yolk, finely grated carrots and vanilla extract. Mix until combined.
- In a separate bowl, combine the flour, kosher salt, baking soda, cinnamon, allspice and nutmeg.
- Add the dry ingredients to the wet ingredients. Mix on high just until incorporated. Do not overmix.
- Wrap the cookie dough tightly and refrigerate for 3 hours.
- Preheat the oven to 350°F. Line 3 baking sheets with parchment paper or silicone baking mats.
- Using a cookie scoop, portion the dough into 16 equal-sized cookies. Arrange them approximately 2 inches apart on the prepared baking sheets.
- Bake for 8–10 minutes. The centers should look slightly underdone but should not jiggle. The longer the cookies bake, the more cake-like their texture will become.
- Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
Make the Cream Cheese Ice Cream
- Add the egg yolks and granulated sugar to a mixing bowl. Whip until the mixture is light and pale yellow. Set aside.
- Add the whole milk, cream cheese, heavy cream and salt to a medium saucepan.
- Place over low-medium heat and warm for approximately 5 minutes, stirring constantly. Do not allow the mixture to boil.
- Slowly add one ladleful of the warm milk mixture to the egg yolk mixture while whisking constantly. Add another small amount and continue whisking to gradually temper the eggs.
- Slowly whisk the remaining warm milk mixture into the egg mixture.
- Pour everything back into the saucepan and reduce the heat to low.
- Mix in the vanilla. Cook, stirring constantly, until the mixture reaches 165°F. Make sure to stir into the corners of the saucepan to prevent the eggs from scrambling.
- Pour the ice cream base into a glass bowl and refrigerate until it reaches approximately 65°F.
- Prepare your ice cream maker according to the manufacturer's directions. Pour the chilled cream cheese ice cream mixture into the machine and churn according to its instructions.
Decorate and Assemble
- Add the crushed walnuts to a pan and toast over medium-low heat for approximately 5 minutes, tossing frequently. Remove from the heat and cool completely.
- Melt the white chocolate chips until smooth.
- Drizzle melted white chocolate over half of each cookie and sprinkle with toasted crushed walnuts, if desired.
- Place approximately 1/2 cup cream cheese ice cream onto the flat side of one completely cooled cookie.
- Top with a second cookie and gently press together.
- Roll the exposed ice cream edges in the remaining toasted walnuts, if desired.
- Freeze the assembled ice cream sandwiches until firm before serving.
Notes
- Don’t overbake the cookies: You want the centers to look slightly underdone when they come out of the oven. Baking them longer will give them more of a cake-like consistency.
