Ingredients

  • 5 thick cut pork chops, 1 1/2" thick
  • 1 cup carrots, sliced
  • 1 cup rutabaga, 1/2" cubes
  • 1 cup turnips, 1/2" cubes
  • 1 tbsp olive oil
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp yellow curry powder
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder

Instructions

  • Preheat the oven to 400 degrees.
  • Add all of the spices to a small bowl and mix to combine.
  • Add the vegetables, olive oil, and half of the spice mix to a baking dish and toss until the root vegetables are fully coated.
  • Season both sides of the pork chops and place on top of the root vegetables.
