- 1 cup rutabaga, 1/2" cubes
- 1 cup turnips, 1/2" cubes
- 1 tbsp olive oil
- 2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp yellow curry powder
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- Preheat the oven to 400 degrees.
- Add all of the spices to a small bowl and mix to combine.
- Add the vegetables, olive oil, and half of the spice mix to a baking dish and toss until the root vegetables are fully coated.
- Season both sides of the pork chops and place on top of the root vegetables.
