For the chicken, I am using my favorite seasoning that you’ll see me use again and again in multiple recipes. My favorite fresh pasta for flavor, texture, and the added bonus it comes directly to my door is Charlie’s Table. Just like the produce in this dish, fresh is always best.

30 Minutes to Dairy Free Roasted Chicken and Figs with Herbed Cheese

This elegant dish looks and tastes like it took hours to prepare with minimal effort and time. With just a few tips you will have dinner on the table in less time than it takes to watch your favorite TV show.

First, let’s start with the chicken. This recipe calls for two bone in, skin on chicken breasts. You can substitute chicken thighs but will need to adjust the cooking time. You’re going to make a split in the middle of each chicken piece to create a pocket. Because the chicken is being roasted at a high heat it will cook quickly.

The zucchini for the pasta in Dairy Free Roasted Chicken and Figs with Herbed Cheese are also roasted. You can put them on a sheet pan and cook them at the same time as the chicken as they roast at the same temp. Make sure you cut them in equal sizes so they cook evenly.

Instructions

Herbed Cheese Roasted Chicken and Figs

  • Preheat the oven to 400 degrees.
  • Cut a slit in the center of each chicken breast, careful not to cut all the way through. Stuff with the Dairy Free herbed cheese.
  • Place chicken in an oven safe skillet or baking dish. Brush the chicken with olive oil and season wit herb seasoning and salt. Arrange the figs around the chicken.
  • Bake chicken for 20 minutes until skin is golden and crispy and the temperature reads 165.

Roasted Zucchini Pasta

  • Spread zucchini evenly on a baking sheet.
  • Roast at 400 degrees for 20 minutes, or until zucchini is to desired doneness.
  • Heat a pot over medium heat. Add the wine and garlic. Allow to simmer for 5 minutes.
  • Toss the garlic infused wine with the zucchini and pasta. Top with fresh basil.
