Ingredients Matter

I don’t know about you, but I love figs. I love their versatility for savory and sweet dishes. They’re just as at home in dessert recipes like my Gluten Free Fresh Fig and Honey Olive Oil Cake as they are in this comforting Dairy Free Roasted Chicken and Figs with Herbed Cheese.

It helps to have a few pantry staples such as a favorite spice blend and fresh pasta to take something as simple as roast chicken and pasta to the next level. With just a little finesse you can elevate your everyday meals.

For the chicken, I am using my favorite seasoning that you’ll see me use again and again in multiple recipes. Outside Table Everyday Herb is the perfect balance of fresh herbaceous flavor including organic thyme and organic oregano. It has a hint of heat while proving sea salt to enhance flavor. It’s equally at home on all of your proteins as it is vegetables.

Dairy Free herbed cheese makes stuffing this chicken a breeze. With just one simple ingredient you have both flavor as well as the perfect way to keep lean chicken breast moist. For this I used Miyokos Double Cream Garlic and Herb Cashew Milk Cheese.

When it comes to pasta, regardless of being Gluten Free, fresh is always best. Not only is the texture better, but it cooks up in minutes! My favorite fresh pasta for flavor, texture, and the added bonus it comes directly to my door is Charlie’s Table. Just like the produce in this dish, fresh is always best.

30 Minutes to Dairy Free Roasted Chicken and Figs with Herbed Cheese

This elegant dish looks and tastes like it took hours to prepare with minimal effort and time. With just a few tips you will have dinner on the table in less time than it takes to watch your favorite TV show.

First, let’s start with the chicken. This recipe calls for two bone in, skin on chicken breasts. You can substitute chicken thighs but will need to adjust the cooking time. You’re going to make a split in the middle of each chicken piece to create a pocket. Because the chicken is being roasted at a high heat it will cook quickly.

The zucchini for the pasta in Dairy Free Roasted Chicken and Figs with Herbed Cheese are also roasted. You can put them on a sheet pan and cook them at the same time as the chicken as they roast at the same temp. Make sure you cut them in equal sizes so they cook evenly.

Since we’re using fresh pasta in this recipe, it cooks quickly. Follow the directions on your packaging to make sure you don’t over cook it.

Now that I know you’re hungry for dinner, let’s get cooking!
