Cranberry Layer

  • 1 cup Antioxidant Solutions Cherry Juice
  • 2 ½ cups fresh or frozen cranberries
  • ½ cup sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water slurry

Tiramisu Ingredients

  • 1 batch of homemade ladyfingers  (or 1 package store bought ladyfingers)
  • 16 ounces mascarpone (or cream cheese, room temp)
  • 8 egg yolks
  • 1 cup sugar
  • 16 ounces heavy cream
  • 1 cup Antioxidant Solutions Cherry Juice
  • ½ cup water
  • 8 ounces whipped topping

  • 8 ounces whipped topping
  • 1/4 cup cranberries

Instructions
 

Make Cranberry Layer

  • In a medium pot over medium-low heat, combine cranberries, cherry juice, sugar, and cornstarch slurry. Stir and cook for 20 minutes until cranberries are soft and slightly burst. 
  • Transfer to a bowl and let cool completely. 

Prepare Egg Mixture

  • In a mixing bowl, combine sugar and egg yolks. Beat on high for 5 minutes until pale yellow and fluffy.

Prepare Cream Mixture

  • In a separate bowl, beat mascarpone and heavy cream until smooth. Fold in the egg mixture until combined. Set aside.

Assemble Layers

  • Mix cherry juice and water in a shallow bowl. Dip ladyfingers briefly into the mixture and layer them on the bottom of the baking dish.
  • Spread half of the cooled cranberry mixture on top, followed by half of the cream mixture. Repeat layers with remaining ladyfingers, cranberry mixture, and cream.

Chill and Serve

  • Cover and refrigerate for at least 6 hours. Before serving, top with whipped topping and cranberries
  • Enjoy!
