Ingredients

Passion Fruit Curd

  • 3/4 cup passion fruit juice seeds strained
  • 1 1/8 cup sugar
  • 4 eggs room temperature
  • pinch of salt
  • 1/2 cup of butter room temperature

Parfait

  • 2 cups of granola
  • 2 cups of vanilla yogurt
  • 1 cup of passion fruit curd
  • 1 cup of kiwi cut up
  • 1 cup of pink pineapple cut up.

Instructions

Passion Fruit Curd

  • In a bowl add all the ingredients and mix on high with a mixer.
  • Pour into a stock pot and place over low heat.
  • Continually stir as the mixture tempers.
  • After 5 minutes turn the heat up to med/low and stir
until thickened.
  • Pour into an airtight container and cool completely.

  • Add the granola to the base.
  • Add kiwi and pineapple.
  • Add yogurt and passion fruit curd.
