While mangos are readily available during the summer, don’t be afraid to substitute the fresh mangos in this recipe for frozen ones. This is a cobbler that while the epitome of summer can give you that summertime flavor year round.

Tropical Peach Mango Cobbler Made Easy

This is my favorite shortcut version of cobbler. It’s important to have trusted pantry staples and one of my favorites is Simple Mills Artisan Bread Mix.

Made with six natural ingredients, starting with almond flour, this bread mix is as versatile as it is delicious. You can make it into flat bread, dinner rolls, or a loaf of bread.

For this recipe you’re going to want to follow the recipe for the loaf. The instructions for the loaf recipe calls for both olive oil and vinegar.

I use Pasolivo Tangerine Olive Oil and Pasolivo Sparkling Citrus Vinegar to infuse a double dose of brightness into the cobbler topping. They have a full line of award winning, world class olive oils and artisanal food products perfect for stocking your pantry.

This Tropical Gluten Free Peach Mango Cobbler is easy to adapt to a lower sugar lifestyle. Simple Mills Artisan Bread Mix doesn’t contain any additional sugar and we are only adding 1 tablespoon of brown sugar to the topping.

The sugar in the fruit portion of the cobbler can easily be substituted for your favorite sugar alternative making the recipe incredibly versatile.

Tropical Peach Mango Cobbler

This tropical taste of summer full of juicy fruit comes together quickly using an artisan bread mix for the cobbler topping.

Ingredients
  

Cobbler Filling

  • 20 oz bag of frozen peaches
  • 1 1/2 cups mangoes, peeled and diced
  • 1/2 cup sugar or sugar substitute
  • two dashes of nutmeg

Cobbler Topping

Instructions
 

Cobbler Filling

  • Combine all of the filling ingredients in a bowl and pour into a cast iron skillet or baking dish.

Cobbler Topping

  • Follow the directions on the box for the loaf mix, with the addition of adding 1 tbsp of brown sugar.
  • Preheat oven to 350 degrees.
  • Scoop cobbler topping onto the top of the fruit mixture.
  • Bake for 30 minutes or until the top is golden brown the the fruit is bubbly.

Notes

Feel free to substitute the frozen peaches for fresh. Vice versa, if fresh mangos aren’t available frozen can be used.
The sugar in the fruit filling can be swapped out for your favorite sugar alternative.
