Commonly Asked Questions

Can I use fresh bread instead of dried bread?

While the recipe calls for dried bread, you can certainly use fresh bread if you prefer. Just be aware that the stuffing might be a bit softer and wetter. You can also squeeze out excess moisture from the bread before adding it to the mixture.

Can I use a different type of sausage?

Absolutely! You can use any type of sausage you like, such as Italian sausage, chorizo, or even ground pork or beef. Just keep in mind that the flavor of the stuffing will vary depending on the type of sausage you use.

Can I make sausage stuffing ahead of time?

Yes, you can make the stuffing ahead of time. Just assemble the stuffing according to the recipe instructions and store it in an airtight container in the refrigerator for up to 2 days. When ready to bake, bring the stuffing to room temperature before baking.

How do I reheat leftover stuffing?

To reheat leftover stuffing, you can either reheat it in the oven at 350°F (175°C) until heated through, or you can reheat it in the microwave in 30-second intervals, stirring in between, until heated through. Avoid overcooking the stuffing, as it can become dry.

Instructions

Prepare Bread

  • Cut one loaf of bread into larger pieces (approx. 2″ cubes) and the second loaf into smaller cubes (1″).
  • Spread the bread cubes out on baking sheets and allow them to dry out for a few hours.

Preheat Oven

  • Preheat your oven to 400°F (200°C).
  • Spray a 9×13 casserole dish with nonstick baking spray.

Cook Sausage and Vegetables

  • Heat a large skillet over medium heat and add the ground sausage. Break it up into smaller pieces as it cooks.
  • Add the diced onions and celery to the skillet and sauté until the onions are translucent and the sausage is browned. Set aside and allow to cool completely.

Prepare Egg Mixture

  • In a large mixing bowl, whisk together the eggs, egg yolks, 2 ½ cups of chicken stock, kosher salt, pepper, ground sage, thyme leaves, fresh parsley, and garlic powder.

Combine Ingredients

  • Working in batches, add the dried bread cubes to the egg mixture, folding them in to absorb the stock. If the mixture seems dry, add additional chicken stock as needed.

Assemble Stuffing

  • Add the cooled sausage, onions, and celery to the bread mixture, and mix until well combined.
  • Pour the stuffing mixture into the prepared casserole dish. Cover with foil. To prevent sticking, spray the foil with nonstick baking spray.

Bake

  • Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 30 minutes, until the top is golden brown and crispy.

Cool and Serve

  • Allow the stuffing to cool for about 10 minutes before serving. Enjoy!
