Ingredients
  

Pancakes

  • 2 cups 1.1 gluten free flour
  • 2 cups buttermilk
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup melted butter
  • 2 1/2 tsp vanilla extract
  • 1 egg
  • 1/4 tsp ground cinnamon

Breakfast Sandwich

  • 1 lbs ground breakfast sausage
  • 8 eggs, whisked
  • 2 slices cheese per sandwich
  • maple syrup for serving.

Instructions
 

  • Pancakes: In a mixing bowl, combine 1.1 GF flour, sugar, baking powder, baking soda, and ground cinnamon. Mix well.
  • In a separate bowl, whisk together buttermilk, melted butter, vanilla extract, and egg until well combined.
  • Pour the wet ingredients into the bowl of dry ingredients. Mix until just incorporated. Note: It's okay to have lumps; do not overmix.
  • Heat a pan over medium-low heat. You can spray it with nonstick spray or add a little butter for cooking.
  • Ladle the pancake batter onto the heated pan. When you see bubbles forming on the edges and the center of the pancake, it's time to flip. Cook for another 2-3 minutes on the other side until golden brown.
  • In a large skillet on medium heat brown sausage until golden a little crisp.
  • Add eggs to sausage and scramble until light and fluffy.
  • To build breakfast sandwich place a pancake on a plate and top with cheese, the egg/sausage mixture, and another slice of cheese. Top with a pancake and drizzle with maple syrup. Enjoy!
