These No-Bake Peaches and Cream Bars layer a vanilla wafer crust with a sweet cream cheese filling and a soft peach topping that sets into clean, chilled slices. The peaches add real texture, the gelatin keeps the top layer light, and the whole dessert works well when you want something cold, creamy, and easy to make ahead!
The vanilla wafer crust is soft, buttery, and presses into a sturdy base that still stays tender once chilled. The cream cheese layer is thick, smooth, and creamy without feeling too heavy, and the peach topping adds a softer texture that keeps every bite feeling fresh and light. What makes these bars work so well is the contrast between the layers. You get a rich, creamy center balanced by the juicy peaches on top, so the dessert does not feel overly dense or too sweet. After chilling, the layers set up nicely and slice cleanly, which makes these especially good for making ahead and serving straight from the fridge.
Here is how it all comes together:
Press the crushed vanilla wafers and melted butter into the pan to form a quick no-bake crust.
Mix the cream cheese, powdered sugar, and milk until smooth, then spread the mixture over the crust.
Prepare the peach gelatin and chill it briefly until it starts to thicken.
Fold the thawed peaches into the gelatin, then spread the mixture over the cream cheese layer.
Chill the pan until the bars are firm enough to slice cleanly.
This is a strong make-ahead dessert because the chill time does most of the work. By the time it is fully set, the layers are firmer, the peach topping is easier to slice, and the bars are ready to serve straight from the fridge!
No-Bake Peaches and Cream Bars combine a buttery vanilla wafer crust, sweet cream cheese filling, and a soft peach topping for a chilled dessert with clean slices and real peach flavor. They are easy to make ahead and serve straight from the fridge!
Can I make No-Bake Peaches and Cream Bars ahead of time?
Yes, this dessert is best made ahead. The extra fridge time helps the peach layer set properly and makes the cream cheese layer firmer, so the bars cut much more cleanly.
How should I store leftovers?
Keep the bars covered in the refrigerator. They are best served cold, and the texture stays nicest within a couple of days, especially once the peach layer is fully set.
Can I use fresh or canned peaches instead of frozen?
Yes, but they need to be well drained so the topping does not loosen too much. Fresh peaches should be peeled and sliced, and canned peaches should be drained thoroughly and patted dry before folding into the gelatin.
How do I make these dairy free?
Use dairy-free butter, dairy-free cream cheese, dairy-free milk, and a dairy-free whipped topping if you want to finish them that way. Since dairy-free cream cheese can vary in texture, mix until fully smooth and chill the bars thoroughly before slicing.
How do I make these gluten free?
Use gluten-free vanilla wafer cookies for the crust and check the peach gelatin label to make sure your brand fits your needs. Since packaged ingredients can vary, this recipe is one where label-checking matters.
