Ingredients
  

  • 1 cup cooked beef (I used pot roast) or ground beef*
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 pkg cremini mushrooms, sliced
  • 1 tsp garlic, minced
  • 1/2 tsp thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 1 tsp browning sauce
  • 1/2 cup sour cream
  • 2 cups pasta, cooked
  • parsley for serving

Instructions
 

  • Heat your stock pot over medium heat until warmed through.
  • Add olive oil to the pot and let it heat for 30–60 seconds. Once hot, add the diced onions and sliced mushrooms. Sauté for about 5–7 minutes, stirring occasionally, until the onions are soft and translucent and the mushrooms have begun to brown and release their moisture.
  • Stir in the minced garlic and dried thyme, and cook for another 1–2 minutes until fragrant. Then season with salt and pepper to taste.
  • Pour in the browning sauce and beef broth, then add the heavy cream, cooked beef (such as pot roast or ground beef), and sour cream. Stir everything together until well combined.
  • Bring the sauce to a simmer. Let it cook uncovered for about 10 minutes, stirring occasionally, until the sauce reduces and thickens to your desired consistency.
  • While the sauce simmers, cook your pasta according to package instructions. If using fresh pasta like Charlie’s Table, it should be ready in just a few minutes.
  • Once the sauce is thickened, stir in the cooked pasta until fully coated.
  • Serve immediately, topped with chopped fresh parsley for a pop of color and flavor.
