    There is something comforting about having a well stocked pantry and knowing you can prepare something both beautiful and delicious at any given time. Using a boxed cake mix like Simple Mills Vanilla Cupcake and Cake Mix not only makes this decadent Gluten Free Raspberry Cake with Chocolate Buttercream come together easily, it contains ingredients you can feel good about.

    In addition to the box caked mix, raspberry gelatin also lends a quick dazzle of flavor. For this recipe I'm using Simply Delish Raspberry Jel. Made with natural raspberry flavor and sugar free it's a great pantry staple to have on hand.

    We all grew up with confetti cake. Slicing into that joyous and cheery cake you were greeted by bursts of happy colors. Slicing into this cake you will find fireworks of fresh raspberries. Bursting with tart sweetness in all of their scarlet glory, they offer both flavor and moisture.

    This tender fluffy cake wouldn't be complete without the perfect frosting. What goes better with raspberries than chocolate? The Dairy Free chocolate buttercream is the ultimate creamy accent. Dairy Free butter, powdered sugar, cocoa powder, and vanilla get mixed together for a frosting that is as easy as it's decadent.

    Gluten Free Raspberry Cake with Chocolate Buttercream

    Tender and moist raspberry cake is frosted with decadent chocolate buttercream. This Gluten Free and Dairy free dessert comes together easily with the help of pantry staples.

    Equipment

    • 2 mixing bowls
    • 8" round cake pan
    • offset spatula or butter knife

    Ingredients

    Raspberry Cake

    • 1 box white/yellow cake mix
    • 1 box raspberry gelatin
    • 2 cups raspberries, plus extra for topping
    • ingredients for your boxed cake mix

    Chocolate Buttercream

    • 1 cup Dairy Free butter
    • 3 ½ cup powdered sugar
    • ¾ cup cocoa powder
    • 2 tsp vanilla extract

    Instructions

    Raspberry Cake

    • Preheat oven to the recommended temp on your cake mix.
    • Combine the cake mix and raspberry jello.
    • Following the directions on the box, add your wet ingredients to your dry ingredients and mix to combine.
    • Bake cake according to cake mix directions.
    • Allow to cool.

    Chocolate Buttercream

    • Mix all ingredients together in a bowl until creamy and smooth.
    • Using an offset spatula or butter knife spread the frosting over the top of the cake.
    • Top with fresh raspberries.
    • Slice and enjoy!
