There’s something about having a sweet treat that’s perfect anytime of day. This beautiful and festive bread is perfect with your morning coffee or an afternoon treat. If you pop a bottle of bubbly and make mimosas, it’d be equally at home on your brunch table.

Autumn in the Air

Why do apples get all of the fanfare for fall? This Gluten Free Pear Spice Bread with Walnuts celebrates the other orchard bounty of the season. There’s something special about pears and their unique way to adapt to both sweet and savory foods while standing out on their own.

Pears have a texture unto themselves. Crisp, but in a different way than apples. They are perfect for grating such as in this recipe, but also hold their shape when sliced. Sweet, but with that irresistible fresh tang. I love using pears in this recipe because it doesn’t matter if they’re not quite ripe enough. They will still caramelize and sweeten, adding beautiful texture and color.

For this recipe I am using Lakanto Monkfruit Sweetener. This 1.1 sugar substitute contains zero calories. It is also ketogenic, diabetic, paleo, and low-sugar friendly. I love that it bakes just like regular sugar.

Some people go for the pumpkin spice, I am spicing this pear bread up with my favorite combination of spices. Cinnamon and nutmeg add both warmth and their aromatic perfume to every bite of this bread.

In addition to the walnuts, raisins also add a unique texture and chew while also lending their natural sweetness. Every bite gives you a little bit different experience.

Getting Spicy with Gluten Free Pear Spice Bread with Walnuts

Quick breads are the perfect easy baking recipes and this pear bread definitely falls into that category. It’s as easy as mixing, and I will walk your through it step by step.

To begin with, you are going to mix your sugar substitute (or regular sugar), vanilla, and eggs. You want the sugar to slightly dissolve and the eggs to get a little frothy.

Next the remaining wet ingredients go in. This includes the grated pear. To help everything come together easily in your Gluten Free Pear Spice Bread with Walnuts you want to make sure your Dairy Free butter is at room temperature.

Next the dry ingredients go in. Don’t over mix. You want to make sure you stir everything in until just combined.

I like to add pear slices to the bottom of my prepared bread pan, but this step is completely up to you. The pear flavor will still shine through with every bite. This is a denser bread as most quick breads are so bakes for 35-45 minutes, or until a toothpick comes out clean.

Gluten Free Pear Spice Bread with Walnuts

This quick bread is filled with fresh grated pears, walnuts, and raisins for a perfect start to the day or afternoon treat.

Ingredients

  • 1 1/2 cups Gluten Free 1.1 flour
  • 1/2 tsp kosher salt
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • pinch of nutmeg
  • 1 cup sugar substitute
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup grated pear
  • 8 tbsp Dairy Free butter, room temperature
  • 1/2 cup walnuts, chopped
  • 1/2 cup raisins
  • *optional, pear sliced thin, lined in the bottom of the loaf pan. Pears will caramelize some and add flavor and texture.

Instructions

  • Preheat oven to 350 degrees. Spray a loaf pan with nonstick baking spray and set aside.
  • Add the eggs, sugar, and vanilla to a bowl and mix for 3 minutes.
  • Add the rest of the wet ingredients including the pear. Mix well.
  • Add the remaining ingredients and mix until just incorporated. If adding sliced pears, line the bottom of the pan with the slices. Pour batter into the prepared loaf pan.
  • Bake for 35-45 minutes, or until a toothpick comes out clean.
  • Allow to cool before slicing. Enjoy!
