Sometimes you need a quick and easy breakfast that is perfect for the weekend while also being great for a weekday. These Gluten Free Easy Savory Breakfast Crepes take a pantry staple and maximize flavor with minimal work.

Just because these fully loaded breakfast crepes come together quickly doesn’t mean you’re sacrificing flavor. A little smoky, a little spicy, and completely delicious they’re sure to become a favorite.

Pantry Staples

A well stocked pantry and refrigerator makes dishes like this a breeze. Take the help of premade crepes, you can focus on building the delicious scramble.

For this dish I am using Crepini. Crepini Egg Wraps are Gluten Free, Keto and Paleo friendly, and Dairy Free. They come in grande and petite sizes as well as three different flavors. For this recipe I used the Gluten Free – Grains but they also have egg wraps with cauliflower and egg wraps with sweet potato and turmeric.

In addition to the premade crepes making these Gluten Free Easy Savory Breakfast Crepes come together quickly, utilizing a few spices helps make the flavors shine. Ancho chili powder brings an earthy, smokiness to the sweet potatoes.

Make sure to always check the dates of your spices. If you don’t remember the last time you used it it’s probably a good idea to replace them. You always want the freshest flavors possible.

This recipe calls for ham. I used Niman Ranch ham. Their hams are free of antibiotics, hormone free, certified humane, nitrate free, and smoked over real applewood. This is a perfect use for leftover ham making it come together that much faster.

Cracking Gluten Free Easy Savory Breakfast Crepes

As easy as this breakfast is, let’s make it even easier by breaking it down.

First, uniformity matters. Especially with sweet potatoes. When cutting your sweet potatoes you want to keep them all around the same size. This will ensure they cook evenly. Also if you cube them smaller it’ll allow them to cook faster.

Since the ham is already cooked, you’re just looking to get a little color on it. Keep the cubes about the same size as the sweet potatoes. There’s something about that perfect bite of fully loaded crepe with eggs, sweet potatoes, and ham. You want it all on the fork!

Next up is the actual cooking of the sweet potatoes. Make sure your pan is fully heated before adding them. Don’t stir them too often. Let them get a little caramelization before flipping them. There is depth of flavor in those dark brown caramelized bits!

While you want a higher heat for the potatoes, you want a lower heat when scrambling your eggs. Don’t rush them. It helps keep them tender, fluffy, and creamy.

Gluten Free Easy Savory Breakfast Crepes

Premade Gluten Free crepes are topped with spice roasted sweet potatoes, savory ham, and fluffy scrambled eggs for the ultimate start to your day.

Equipment

  • Large skillet

Ingredients

  • Gluten Free crepes premade
  • 1 sweet potato, cubed large
  • kosher salt, pepper, ancho chili powder, pinch of each
  • 4 eggs
  • 1 cup ham, cubed
  • optional, Dairy Free cheese for topping

Instructions

  • Heat a large skillet on medium heat. Add a splash of olive oil.
  • Add the sweet potatoes, seasoning them with the salt, pepper, and ancho chili powder. Allow to caramelize on all sides, 6-10 minutes.
  • Remove from pan and add the eggs, scrambling until light and fluffy, 4-5 minutes. Add the ham and heat through.
  • To assemble crepes fold in half and plate. Top with sweet potatoes, eggs and ham, and a sprinkle of Dairy Free cheese if desired. Enjoy!
