    Did you grow up stealing spoonful's of raw cookie dough straight from the mixing bowl? I don't know about you, but I still find myself doing it sometimes, especially when I make cookies like Gluten Free Pistachio Cookies with White Chocolate. This fully loaded French toast gives you everything you love about raw cookie dough and more.

    Bring Out the Spoon

    Eating raw cookie dough seems to be one of those childhood rites of passage that follows many of us into adulthood. Gluten Free Cookie Dough Stuffed French Toast takes away the no and replaces it with all of the yes.

    Make the edible cookie dough for this French toast, but be warned you'll find yourself making it just because. Completely Dairy Free, Gluten Free, and oh so irresistibly delicious, the edible cookie dough itself is a feast for the senses.

    Softened Dairy Free butter is combined with both brown sugar and regular sugar. Dairy Free bittersweet chocolate and semi-sweet chocolate bring depth and complexity. Gluten Free 1 to 1 flour offers up body while aromatic vanilla lends a floral note. It's all of the ingredients you know and love in traditional chocolate chip cookies, minus the eggs making this not only safe to eat raw, but also the perfect filling for French toast.

    We're not stopping at just filling the Gluten Free slices of bread with edible cookie dough though. This is a dish you can brunch with, and brunch should be extravagant and memorable. Dairy Free chocolate-hazelnut spread takes these to the next level and offers up that sticky, ooey-gooey, molten chocolate drip.

    How to Make Gluten Free Cookie Dough Stuffed French Toast

    Pop open the bubbly because this dish is a creation to celebrate, and celebrate with. The best part is you can make the edible cookie dough ahead of time making this easy to assemble when you're ready.

    Time needed: 20 minutes.

    With just a few simple steps you will be on your way to wowing your loved ones.

    1. Make the Edible Cookie Dough

      Make sure your Dairy Free butter is at room temperature. Add the butter and both sugars to a mixing bowl and mix on high for 5 minutes. It should be light and fluffy.

    2. Double the Chocolate

      Add your remaining ingredients and mix until just combined.

    3. Make Your Custard

      Add your egg, Dairy Free milk, sugar, and cinnamon to a shallow dish and whisk together. This will be the custard in which you dip your French toast.

    4. Sugar and Spice

      Add the additional cinnamon and sugar to a separate shallow dish and stir to combine.

    5. Build Your Sandwiches

      Add 1 tbsp of Dairy Free chocolate-hazelnut spread to one side of the bread. Spread the edible cookie dough to the other slice of bread. Sandwich them together.

      Dip the sandwich into the custard, and then dip it into the cinnamon and sugar mixture making sure all sides are coated. Continue on with remaining bread.

    6. Fry Time

      Heat a large skillet or griddle over medium heat with Dairy Free butter. Cook each side of the Gluten Free Cookie Dough Stuffed French Toast for 3 minutes, or until golden brown.

    7. Breakfast is Served

      While it's optional, feel free to drizzle warm maple syrup over the top.

    Tips for Gluten Free Cookie Dough Stuffed French Toast

    • The edible cookie dough can be made the night before. However, allow it to sit out briefly to soften so it's easier to spread.
    • Use your favorite Gluten Free bread for this recipe.
    • This recipe can easily be doubled and tripled. You can also make the edible cookie dough and use it for other things.

    Equipment

    • 1 Mixing Bowl
    • 1 large skillet or griddle
    • 2 shallow bowls for dredging

    Ingredients

    Edible Cookie Dough

    • ½ cup Dairy Free unsalted butter, room temperature
    • ⅓ cup brown sugar
    • ¼ cup sugar
    • 1 ½ tsp vanilla extract
    • 1 cup Gluten Free 1.1 flour
    • 1 cup Dairy Free semi-sweet chocolate chips
    • 1 cup Dairy Free bittersweet chocolate
    • 2 tbsp Dairy Free milk, such as oat milk

    French Toast Custard

    • 1 cup Dairy Free milk
    • 1 tbsp sugar
    • ½ tsp cinnamon
    • 1 egg

    Cinnamon and Sugar

    • ½ cup sugar
    • 1 tsp cinnamon

    • Gluten Free bread
    • Dairy Free chocolate-hazelnut spread

    Instructions

    Edible Cookie Dough

    • Add the room temperature butter and sugar to a mixing bowl and mix on high for 5 minutes until it is light and fluffy.
    • Add the remaining ingredients and mix until just combined.

    Gluten Free Cookie Dough Stuffed French Toast

    • Whisk together the ingredients for the custard in a shallow bowl or dish.
    • Mix together the cinnamon and sugar in a shallow bowl or dish.
    • To build your French toast, spread 1 tbsp of chocolate-hazelnut spread on one piece of bread. Spread the edible cookie dough on the other slice of bread. Sandwich them together.
    • Dip the sandwiches in the custard mixture and then dip them in the cinnamon and sugar mixture.
    • Heat a large skillet or griddle on medium heat and add Dairy Free butter.
    • Allow the first side of the French toast to cook for approximately 3 minutes before flipping. Cook the second side for another 3 minutes. They should be golden brown.
    • Serve with maple syrup if desired.
    • Enjoy!
