    Who remembers the whole Taco Bell Mexican pizza craze? And then that time they took it off the menu and everyone started demanding it. You never have to worry about missing out on your favorite Mexican pizza flavors with this Gluten Free Chorizo Pinto Bean Flatbread.

    Instead of saying "Yo Quiero Taco Bell" this flatbread will have you saying pass me another slice please! Using favorite pantry staples, this comes together faster than getting in your car and going through drive-thru. More importantly these are all beautiful healthy ingredients you can feel good about serving your family and friends.

    Ingredients Matter

    When it comes to quick and easy meals, ingredients truly matter. A well stocked pantry makes creating a flavorful and fun dish like this a breeze. This is the perfect creative lunch to serve friends as well as a great quick weeknight dinner.

    The base of this flatbread is a ready made pizza crust. Use your favorite Gluten Free brand. For this recipe I used Cappello's Naked Crust. Certified Gluten Free and made with both almond and cassava flours, it is also Dairy Free, soy free, grain free. All quick recipes should begin with quality ingredients.

    For that luxurious cheesy portion of this flatbread, I am using Kite Hill Dairy Free Queso. Made with almond milk, it's packed full of red peppers, tomato, jalapenos, and spices.

    Building Your Gluten Free Chorizo Pinto Bean Flatbread

    Building the perfect flatbread is all about building layers of flavor and texture. You want to have fun combining your proteins with pops of fresh vegetables. It's okay to have both hot and cool elements, like a warm flatbread with that crisp arugula topping.

    Depending on the variety of crust you use, this is a great opportunity to get an extra layer of flavor by cooking your crust on the grill. Just follow the package directions to get that kiss of wood or charcoal fired flavor.

    For this Gluten Free Chorizo Pinto Bean Flatbread, I grilled the crust, and then built my layers. Spread your queso as the decadent creamy portion of this flatbread. The sprinkle on your cooked and drained chorizo. Add a flourish of drained and rinsed pinto beans. And finally, add your fresh vegetables. It is that quick and easy!

    • Baking Sheet

    Ingredients

    • 1 Gluten Free pizza crust, cooked
    • Dairy Free pepper cheese spread
    • ½ lbs. chorizo sausage, cooked and drained
    • 2 sweet peppers, diced
    • 1 jalapeno, sliced thin
    • ½ cup tomatoes, chopped
    • ½ cup pinto beans, drained and rinsed

    Instructions

    • Bake pizza crust according to package instructions.
    • Spread with the queso.
    • Sprinkle chorizo evenly over the top, followed by the pinto beans and the vegetables.
    • Slice and enjoy!
