Barbecue season and summer is upon us. I am always looking for the perfect dish to bring to a bbq bash. This Gluten Free Chipotle Chicken Bacon Pasta Salad is great as a side or a cool and easy main dish.

Bacon makes everything better, including this pasta salad. The bacon isn’t the only thing that makes this dish a total winner.

Dano’s Hot Chipotle Seasoning brings a little smoky heat to both the baked chicken, and also the dressing in this pasta salad. These seasoning packs so much flavor, no other spices are required!

How to Make Gluten Free Chipotle Chicken Bacon Pasta Salad

Whether you make this the day of or the day before, this dish comes together effortlessly.

Time needed: 30 minutes

With just a few easy steps this dish will become a family favorite!

  1. Pot’s On

    Boil your Gluten Free pasta according to the package direction. Drain and allow to cool.

  2. Bake it Up

    Preheat your oven to 400 degrees. Add olive oil to a baking dish and season your chicken breasts with Dano’s Hot Chipotle Seasoning. Bake your chicken for 20 minutes or until the internal temperature is 165 degrees. A digital thermometer is perfect for this.

    Allow your chicken to cool before cutting it into cubes.

  3. Bacon’s On

    Fry up your bacon! Drain off the fat and allow it to cool before chopping it up.

    You can also bake your bacon on a foil lined sheet pan for easy clean up.

  4. Saucy

    Make your dressing. Mix together the mayo, Dairy Free sour cream, garlic, and Dano’s Hot Chipotle Seasoning.

  5. Dinner is Done!

    Stir in the pasta, chicken, bacon, and chopped tomatoes. Top with green onions.

    You can either serve this immediately when it’s still warm or chill it before serving. This makes for great leftovers!

Top Tip for Gluten Free Chipotle Chicken Bacon Pasta Salad

If you want to add even more flavor and another element of smoke to this dish, you can also grill your chicken. Simply rub the chicken breasts in olive oil, season them with the Dano’s Hot Chipotle Seasoning, and grill until they reach 165 degrees.

Equipment

  • 1 8×8 baking dish
  • 1 Serving bowl
  • 1 digital thermometer

Ingredients

  • 1 lbs chicken breasts
  • 3 tsp Dano's Hot Chipotle Seasoning, divided
  • 1 cup Dairy Free sour cream
  • 1 cup mayonnaise
  • 1 lbs bacon, cooked and chopped
  • 1 cup tomatoes, diced
  • 1 tsp olive oil
  • 1 tsp garlic, minced
  • 12 oz Gluten Free pasta, cooked according to the package directions and drained
  • 1/8 cup green onions, chopped

Instructions

  • Preheat your oven to 400 degrees.
  • Add the olive oil to your baking dish.
  • Season both sides of your chicken breasts with 1 1/2 tsp of the chipotle seasoning.
  • Bake the chicken for 20 minutes, or until the internal temperature is 165 degrees.
  • Allow to cool before dicing into 1" cubes.
  • Add the mayonnaise, Dairy Free sour cream, garlic, and remaining 1 1/2 tsp of chipotle seasoning to a serving bowl and stir to combine.
  • Mix in the cubed chicken, bacon, pasta, and tomatoes.
  • Top with the green onions.
  • Enjoy!
