Gluten Free Biscuits with Sausage Duck Glace Gravy

To begin with, let’s talk biscuits. You need the perfect bed to blanket in that luxurious gravy. As soon as the smell wafts through the kitchen you know greatness is ahead.

For these Gluten Free Biscuits with Sausage Duck Glace I’m making drop biscuits. There’s no need to roll out and cut dough. You mix until the ingredients are just combined and using an ice-cream scoop portion them out onto your baking sheet.

Let the Gravy Flow

Bacon. Sausage. Duck Glace. These three power bombs of flavor deserve their own moment to build anticipation. This meaty and rich gravy is so luxuriously decadent you won’t miss any dairy.

This isn’t your typical sausage gravy. We start with a one two punch of both bacon and sausage. For this recipe I am using Niman Ranch Bacon and Niman Ranch Sausage.

Their center cut bacon is available in both dry cured and uncured nitrate free. With sugar free options and both hickory and applewood smoked varieties, they have a flavor for everyone.

Their fully cooked artisanal nitrate free sausages also come in a wide variety of flavors. From breakfast sausage to hot links, they have your entire day covered. All of their products come from U.S. family farmers committed to sustainability and humane practices.

The velvety texture that hugs each bite of biscuit comes from a combination of a cornstarch slurry, and the duck glace.

What is glace? Often referred to as demi glace, it’s a thick reduction of stock allowed to cook low and slow until it’s reduced by almost 90%. Viscous and intensely flavored, it’s the base of this beautiful gravy.

I want you to imagine that perfect bite. Molten golden yolk mingling with savory velvety gravy, coating a piece of comforting biscuit. Then go in and spear a chunk of even more sausage.
