  • 1 flatbread, cooked, baked at 450°F with olive oil and a sprinkle of salt.
  • 2-3 tbsp bacon jam
  • 4-6 slices brie cheese
  • ½ cup cooked chicken, shredded or diced
  • 4 slices prosciutto
  • 2 cups fresh figs, quartered
  • 1 handful arugula
  • Balsamic glaze, for drizzling

Bacon Jam

  • 1 lbs bacon, thinly sliced
  • 1 large onion, thinly sliced
  • pinch of salt
  • 1 tbsp BBQ seasoning
  • 2 tbsp  honey
  • ¼ cup packed brown sugar
  • cup apple cider vinegar

  • Preheat oven to 450°F.
  • Spread bacon jam evenly over the cooked flatbread.
  • Add slices of brie cheese on top.
  • Place flatbread back in the oven for 5 minutes, until the cheese is just melted.
  • Remove from oven and top with chicken, prosciutto, fresh figs, and arugula.
  • Finish with a drizzle of balsamic glaze.
  • Slice and serve warm.

Bacon Jam

  • Add the bacon and onions to a sauce pan over medium heat.
  • Cook until the onions are caramelized and the bacon is completely cooked through, 10-15 minutes.
  • Removed the mixture and drain the fat. Add the onions and bacon back to the pot.
  • Add the remaining ingredients and continue to cook on medium, stirring occasionally, for 20 minutes until the mixture is reduced and thickened.
