One of my friends mentioned to me her love of this certain dish at a restaurant that recently closed. I love playing with and recreating recipes that are easy and accessible at home. This is a fun dish to entertain with and have friends over with.

When it comes to serving up pub grub, go big, or go home. These Gluten Free and Dairy Free Loaded Reuban Fries bring an explosion of flavor and texture in every bite.

Whether you’re serving up a cold beer or shaking up a cocktail, there’s just something special about serving up the ultimate snack. These over-the-top fries are what snacking dreams are made of…meaty, crunchy, salty, savory, and oh so warm and hearty.

These fries combine easy grocery grabs with a pop of freshness. You can keep it completely traditional and use corned beef either from the deli or leftover homemade or go the route I did with leftover brisket. I love that this is a little customizable to both taste and also what you have on hand.

Frozen waffle fries make the perfect base for this tower of delicious eats. A little crispy, a little pillowy, and sturdy enough to hold all of the toppings. Shredded Dairy Free Swiss cheese brings the melty factor while sauerkraut brings the tang. Rounding out all of the crave-worthy layers and bringing a pop of cool freshness is a homemade slaw. The salty, briny punch of pickle juice in the dressing wakes everything up and makes your taste buds dance.

Easy and Fun Gluten Free and Dairy Free Loaded Reuban Fries

Invite some friends over and get your cocktails ready because this dish is a readymade party. Whether you’re using leftover meat or taking help from your local deli, this couldn’t be easier.

  • Pregame! Preheat your oven to 425 degrees. Spray a baking sheet with nonstick baking spray.
  • Add the fries and bake for 20-30 minutes until crispy.
  • Once crispy, add half of the fries to an oven safe baking dish, such as a cast iron skilet.
  • Top the fries with half of the meat and half of the Dairy Free cheese. Repeat the layers.
  • Bake for 15 minutes or until the cheese is melty.
  • Make the slaw while the loaded fries bake. Simply mix everything together until combined.
  • Once the fries are done, top with sauerkraut, the slaw, and drizzle with thousand island dressing. Simple, easy, and delicious!

Gluten Free and Dairy Free Loaded Reuban Fries

These easy and over the top fully loaded fries pack a punch of flavor and texture in every bite.

Equipment

  • 1 Baking Sheet
  • 1 oven safe dish
  • 1 Mixing Bowl

Ingredients

  • 24 oz bag of waffle fries
  • 1/2 tsp Lawry's seasoning
  • 1 cup Dairy Free shredded swiss cheese
  • 2 cups corned beef Can also use leftover brisket or pastrami
  • 1/2 cup sauerkraut
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1/4 cup pickle juice
  • 2 tbsp mayonnaise
  • pinch of salt and pepper
  • 1/2 cup thousand island dressing

Instructions

  • Preheat the oven to 425 degrees. Spray a baking sheet with nonstick baking spray.
  • Add the waffle fries in a single layer to the baking sheet.
  • Bake for 20-30 minutes until golden brown and crispy.
  • Once crispy place half of the waffle fries in an oven safe baking dish or cast iron skillet.
  • Top with half of the meat and half of the cheese.
  • Place the remaining fries on top. Top with the remaining cheese and meat.
  • Bake for 15 minutes or until the cheese is melty.
  • While the fries are baking, mix together the slaw.
  • Mix together the cabbage, carrots, pickle juice, and mayo and season with salt and pepper.
  • Remove the fries from the oven.
  • Top with the sauerkraut, coleslaw, and drizzle thousand island over the top.
  • Enjoy!
