How to Make Gluten Free Baked Macaroni and Cheese

The only thing between you and the creamiest baked macaroni and cheese is a grater and less than an hour. Unlike many recipes that require making a roux, this luxurious cheesy mac couldn’t be easier.

Time needed: 40 minutes

Both lactose free cheddar and lactose free cream cheese make this mac and cheese a total dream.

  1. Pregame

    Preheat your oven to 400 degrees. Shred your cheese. Cook the elbow macaroni according to the package directions, careful not to overcook it.

  2. Melty

    Heat a saucepan over medium heat with the butter and milk. Once the butter has melted add half of your cheese, all of the cream cheese, and the seasonings. Continue to stir until all of the cheese has melted.

  3. Mix

    Add the pasta and stir to combine.

  4. Bake

    Pour the macaroni and cheese into a 7×10 baking dish. Add the remaining cheddar cheese to the top. Allow the mac and cheese to bake for 20-25 minutes or until the cheese is golden, bubbly, and melted.

Substitutions

I used Gluten Free macaroni for this recipe. However, you can make the same recipe with your favorite pasta.

Storage

Not that macaroni and cheese ever lasts long, but the leftovers can be kept in the refrigerator covered for up to a week. Feel free to drizzle in a little extra milk when reheating it in either the oven on low, or in the microwave.

In addition, you can also freeze the leftovers. Once it has been completely cooled it can be portioned into freezer safe bags. Make sure all of the air is out and seal them tightly. They will keep for up to six months.
