    I love giving classic recipes a twist. Taking something familiar like a spice cake and combining it with the holiday staple eggnog creates a whole new experience. This Gluten and Dairy Free Eggnog Tres Leches Cake brings a little of the tropics to the holidays and is sure to become a new family favorite.

    When it comes to the holidays, it's fun to create new memories and traditions. Taking something familiar, like eggnog, and infusing it into something new is a fun way to create lasting memories and start new traditions.

    The Spice of Life

    This Gluten and Dairy Free Eggnog Tres Leches Cake will instantly make your home smell and taste like the holiday season. Infused with spices in every bite you will find yourself anticipating that first bottle of Dairy Free eggnog come the holidays.

    This moist and tender dessert starts with a spice cake. I love this recipe because the components can be made ahead of time, and it only gets better as it sits. It's perfect for any holiday celebration or get together.

    Cardamon, allspice, cloves, nutmeg, and of course cinnamon make this cake both special and irresistible. You can't help but anticipate that first slice as it bakes. However there are two parts to this recipe, the cake itself and the mixture of milks.

    For this recipe I am using Califia Farms Dairy Free Holiday Nog. This almond milk based nog is plant based and infused with ginger and nutmeg. In addition to using this in the spice cake itself it also becomes part of the three milks in this tres leches.

    Besides the eggnog, coconut milk and Dairy Free sweetened condensed milk are combined. The magic of tres leches is the way it's transformed from cake to something soft and decadent by allowing the three milks to seep in.

    Spicing Up Gluten and Dairy Free Eggnog Tres Leches Cake

    While there are two parts to creating this dessert, they're easy. I will take you step by step so you can create this luxurious and special confection.

    • Pregame! Preheat your oven to 350 degrees and spray a 9x13 baking dish with nonstick baking spray.
    • Mix your eggnog, oil, sugar, and eggs on high for 5 minutes. It will become slightly frothy and the sugar will partially dissolve.
    • Add your remaining ingredients and mix until just incorporated.
    • Pour batter into prepared baking dish. Bake for 35-40 minutes, or until a toothpick comes out clean.
    • Allow to cool completely.
    • Mix your trio of milks together.
    • Cut your cake in half. Don't worry if it's not quite perfect because you will be stacking it back together and topping it with your favorite Dairy Free whipped topping.
    • Place the bottom half of the cake back into the baking dish. Using a fork poke holes all over the cake. Pour half of the milk mixture on the cake.
    • Stack the top half on top. Poke more holes with a fork all over and pour over the remaining milk mixture.
    • Allow the cake to refrigerate for at least eight hours. Top your Gluten and Dairy Free Eggnog Tres Leches Cake with your favorite whipped topping.

    Gluten and Dairy Free Tres Leches Cake

    Equipment

    Ingredients

    Eggnog Spice Cake

    • 2 ½ cups Gluten Free 1.1 flour
    • 2 ½ tsp baking powder
    • 1 tsp baking soda
    • 1 cup vegetable oil
    • 1 cup Dairy Free eggnog
    • 1 ¾ cups brown sugar
    • 4 eggs
    • ½ tsp cardamom
    • 2 tsp cinnamon
    • ¼ tsp cloves
    • pinch of allspice
    • ½ tsp nutmeg
    • ½ tsp salt
    • 2 tsp vanilla extract

    Tres Leches

    • 1 cup Dairy Free eggnog
    • 14 oz coconut milk
    • 14 oz Dairy Free sweetened condensed milk
    • Dairy Free whipped topping for serving

    Instructions

    Eggnog Spice Cake

    • Preheat oven to 350 degrees. Spray a 9x13 baking dish with nonstick baking spray and set aside.
    • Add the eggs, sugar, eggnog, and vegetable oil to a bowl and mix on high for 5 minutes.
    • Add the remaining ingredients and mix until just incorporated.
    • Pour the batter into the prepared baking dish. Bake for 35-40 minutes, or until a toothpick comes out clean.
    • Allow to cool completely.

    Tres Leches

    • Mix the three milks together in a bowl.
    • To assemble, cut the cake in half.
    • Place the bottom half of the cake back into the baking dish. Using a fork poke holes all over the cake.
    • Pour half of the milk mixture over the top of the cake.
    • Stack the top half of the cake on top. Repeat with poking holes all over the cake.
    • Pour the remaining milk mixture over the top.
    • Allow to chill in the refrigerator for at least 8 hours before serving.
    • Top with whipped cream.
    • Enjoy!
