    School is out and summer is here. What better way than to celebrate with a sweet treat? These Gluten and Dairy Free Chocolate Caramel Rice Krispie Treats are the perfect way to celebrate without heating up the kitchen.

    Gluten and Dairy Free Chocolate Caramel Rice Krispie Treats

    As much as I love spending all day in the kitchen baking, I also love having easy and quick recipes. Whether it's a no-bake recipe like my Gluten and Dairy Free No-Bake Snickers Pie, or something like these rice Krispie treats that comes together in minutes, it's great having recipes that pull together easily for any occasion.

    Childhood Class

    I think we all grew up eating rice Krispie treats at one time or another as kids. They're timeless and nostalgic. Gluten and Dairy Free Chocolate Caramel Rice Krispie Treats takes that childhood favorite and upgrades it so the entire family can enjoy it.

    This recipe starts with organic, Gluten-Free brown rice crisps from The Real Cereal Company. Everyone knows how much I love food delivery. I love that I can have this cereal delivered right to my door. It's great for baking, such as in these ooey, gooey, sticky bars, but also the perfect bowl of cereal in the morning. You can customize your toppings, from organic blueberries and cranberries to organic cashews and walnuts.

    My favorite thing about this recipe is that is comes together with just five simple ingredients, and they're all pantry staples.

    • Marshmallows
    • Dairy Free butter
    • puffed brown rice cereal
    • Dairy Free sweetened condensed milk
    • Dairy Free semi-sweet chocolate chips or chocolate chopped fine

    The Dairy Free sweetened condensed milk is cooked until it slightly thickens and becomes a little golden, creating an easy and luscious caramel. There's no need for any complicated caramel sauce recipes with these treats!

    How to Make Gluten and Dairy Free Chocolate Caramel Rice Krispie Treats

    The nostalgic confection gets an update the entire family can enjoy! Easy, fun, and delicious, these won't last long.

    Time needed: 20 minutes.

    1. Getting Sticky

      Heat a large stockpot over medium heat. Add your Dairy Free sweetened condensed milk and Dairy Free butter. Allow it to cook for 5-8 minutes. It should thicken slightly and darken a little.

    2. Marshmallow Time

      Pour in your marshmallows and continue to stir until they are completely melted into the caramel. Turn off the heat and add your puffed brown rice cereal, stirring to make sure everything is fully combined.

    3. Cool Down

      This recipe fits into a 9x13 casserole or baking dish. Pour the rice Krispie treats into the casserole. Use a spatula to spread them out. Allow them to cool completely.

    4. Top it Off

      Pour melted Dairy Free chocolate over the top. You can melt the chocolate in the microwave or melt it by creating a double boiler. Use a spatula to spread it over the top. I like to garnish mine with mini chocolate chips.

    Top Tip for Gluten and Dairy Free Chocolate Caramel Rice Krispie Treats

    This is a fun dessert to make ahead. You can make this the day before or even a couple of days before. Mt favorite way to melt the chocolate for this recipe is with a double boiler.

    When you create a double boiler, it allows you to cook or melt something at a gentle heat without worry of over cooking it. This is useful for making custards, meringues, melting chocolate, etc. The best part is you don’t need any special tools.

    Armed with a pot of simmering water and a glass bowl, you can easily create a double boiler at home. The key is to make sure the water never touches the bottom of the bowl. You want the steam created from the seal to do all of the work.

    These fun and easy treats combined puffed brown rice with an ooey gooey caramel sauce.

    Equipment

    • 1 stockpot
    • 1 9x13 casserole dish

    Ingredients

    • 16 oz marshmallows
    • 2 tbsp Dairy Free butter
    • 7 cups Gluten Free Organic Brown Rice Crisps
    • 6 oz Dairy Free sweetened condensed milk
    • 1 cup Dairy Free semi-sweet chocolate, either chocolate chips or chocolate finely cut up
    • mini Dairy Free chocolate chips for topping, optional

    Instructions

    • Heat a large stockpot on medium heat. Add the sweetened condensed milk and butter. Allow it to cook for 5-8 minutes. It should thicken slightly and darken in color.
    • Stir in the marshmallows and continue to stir until they are melted.
    • Remove the pot from the heat and stir in the cereal.
    • Pout the cereal mixture into the baking dish. Allow it to cool completely.
    • Melt the chocolate either by creating a double boiler or in the microwave.
    • Spread the melted chocolate over the top of the rice Krispie treats.
    • Top with mini chocolate chips if desired.
