Whether you’re looking for a fun lunch or a quick and easy dinner, Gluten and Dairy Free Chipotle Chicken Tostadas are the answer. Packed with protein and fresh toppings they’re an easy, healthy, and affordable dish.

Why do tacos get all of the glory? There is nothing like a fully loaded tostado. They’re basically one giant personal sized nacho! They’re fun, interactive, and ideal if you want to serve a crowd as everyone can build and create their own.

The smoky and slightly spicy chicken is the star of these tostadas. All it takes is one simple pantry staple to give bold flavor to the lean ground chicken, Dan-O’s Hot Chipotle Seasoning. In addition to the chipotle powder, there is also garlic and onion, citrus, dry herbs, and sea salt.

Refried black beans add a creamy base to nestle the savory chicken on. Using canned refried black beans helps these come together that much faster. Shredded Dairy Free mozzarella gives a little creaminess while avocados, tomatoes, and cilantro offer a pop of fresh flavors.

How to Make Gluten and Dairy Free Chipotle Chicken Tostadas

Other than heat up your favorite can of refried black beans, this meal is practically a one skillet meal. Dinner will be on the table in 30 minutes or less!

Taco night gets an upgrade with these fully loaded and stacked smoky chicken tostadas.

  1. Getting Smoky

    Heat a large skillet over medium heat. Add your olive oil and ground chicken. Use your spoon to break up the ground chicken. Allow it to cook for about 5 minutes.

    Add your diced poblano pepper, water, and Dan-O’s chipotle seasoning. Allow the mixture to cook for 5 minutes or until the poblanos are tender and the chicken is cooked through.

  2. Toppings

    While your chicken is simmering, heat up your refried black beans and chop up your tomatoes and avocado.

  3. Stack it Up

    To build your chicken tostados, spread a layer of refried black beans onto your Gluten Free tostada shell. Add a sprinkle of Dairy Free mozzarella. Top it off with the chipotle ground chicken. Add your fresh toppings and enjoy!

Top Tip

This recipe uses lean ground chicken. However, you can easily replace the ground chicken with ground turkey, ground beef, or even ground pork. Use it as a base and make it your own!

Ingredients

  • 1 lbs ground chicken
  • 1 tbsp Dan-O's Hot Chipotle Seasoning
  • 1 poblano pepper, diced
  • 2 tsp olive oil
  • 1/2 cup water
  • 15 oz can refried black beans
  • 2 avocados, sliced
  • 1/2 cup Dairy Free mozzarella cheese, shredded
  • 1 cup tomatoes, diced
  • 8 Gluten Free tostada shells
  • 1/4 cup cilantro, optional

Instructions

  • Heat a large skillet over medium heat. Add the olive oil and ground chicken.
  • Use your spoon to break up the chicken. Allow it to cook for 5 minutes.
  • Add the diced poblano pepper, water, and Dano's Chipotle seasoning. Allow the chicken to cook for another 5 minutes or until the chicken is cooked through, the water has slightly evaporated, and the poblanos are tender.
  • While the chicken is cooking heat up your refried beans.
  • To build your tostadas, spread a layer of beans onto the tostada shell.
  • Top with a sprinkle of cheese. Add the chipotle chicken. Finish off with tomatoes, avocado, and cilantro is desired.
  • Enjoy!
