Gluten and Dairy Free Cannoli Crepes with Pistachios

Crepes are the ultimate canvas for playing with both flavors and textures. They might sound fancy and complicated but with the help of a pantry staple they come together easily.

Pantry Favorites

Cannoli are one of my favorite things. I love the combination of fluffy creamy Dairy Free ricotta and the little pops of mini chocolate chips. These Gluten and Dairy Free Cannoli Crepes with Pistachios were created after the cannoli craving hit!

Using the help of a couple of my favorite pantry staples I was able to create this breakfast/dessert mashup. For this recipe I am using my favorite crepe mix, Josie’s Best The Crepe. This certified Gluten Free mix is also free of eggs, tree nuts, peanuts, and soy.

If you can mix pancakes, you can mix these crepes. With easy to follow directions you will have these thin pancakes waiting for their toppings in no time.

Another pantry staple that makes these crepes pop is the addition of pistachio paste. If you love pistachios as much as I do you need to add this to your baking pantry. The natural flavor of pistachios is intensified, perfect for a drizzle like in these crepes, or adding to your favorite cake and cookie recipes, like my recipe for Gluten Free White Chocolate Pistachio Lava Cakes.

Easy Gluten and Dairy Free Cannoli Crepes with Pistachios

I love this recipe not only for the flavors but also because it’s easy to make for a fun weekday breakfast or fabulous weekend brunch. Let’s walk through each step.

  • Follow the directions of your favorite crepe mix. I am using a Gluten Free variety, but use what you like.
  • Mix Dairy Free ricotta with powdered sugar. If your ricotta is slightly room temperature that will help it come together faster and give you that smooth fluffy texture.
  • Fold in your mini Dairy Free chocolate chips. The recipe calls for 1/8 cup, but chocolate chips are measured with your heart.
  • Fold your crepes. Top each crepe with a couple tablespoons of the ricotta mixture. Drizzle with pistachio paste and give a sprinkle of chopped pistachios.

Ingredients

  • crepe mix
  • 8 oz Dairy Free ricotta, room temperature
  • 1/8 cup powdered sugar
  • 1/8 cup Dairy Free mini chocolate chips, plus extra for serving
  • 2 tbsp pistachio paste
  • 2 tbsp pistachios, chopped

Instructions

  • Prepare the crepes according to the package directions. I like to use oat milk but use what you like.
  • In a small bowl combine the ricotta and powdered sugar. Mix until creamy and fluffy. Fold in the chocolate chips.
  • Fold each crepe. Top each crepe with a couple tablespoons of the ricotta mixture.
  • Top with a drizzle of pistachio paste, pistachios, and extra chocolate chips.
  • Enjoy!
