I am pretty sure it’s a proven fact that rum makes everything better. This recipe combines my Gluten Free and Dairy Free banana bread with rich and decadent bananas foster sauce.

Decadent Dessert

Banana bread is one of the ultimate comfort foods. Gluten and Dairy Free Bananas Foster Banana Bread elevates that comfort into a show-stopping dessert.

I have an admission to make. I totally crushed this before asking anyone else if they wanted to try it. Between the sweet perfume of cinnamon lacing the air as the banana bread baked and watching that sticky sweet sauce cascade over the lightly toasted bread, there was no way I couldn’t dive in.

This over-the-top confection should come with a couple of warnings. First, make sure you grab a plate for yourself first, second, it will disappear so fast, you’ll wish you would’ve doubled the recipe.

This sweet treat starts with my classic banana bread. With hints of cinnamon and the crunch of walnuts, it’s already incredible on its own. Once cooled I toast the banana bread to give it that irresistible crusty bite.

The sauce makes this a full sensory event. If you’ve ever had bananas Foster you know the magical powers of the flambéed rum, bananas, and sticky caramelized brown sugar. I also love adding walnuts to the sauce for both the crunch factor, and also to echo the flavors in the banana bread. No judgement if you’re eating this sauce with a spoon before it even makes it to the bread!

Two Steps to Gluten and Dairy Free Bananas Foster Banana Bread

This recipe will have you seeing banana bread in an entirely new light. Give it the razzle dazzle of a luxuriously rich and delectable sauce with just two simple steps.

  • Pregame! Preheat your oven to 35 degrees. Spray a loaf pan with nonstick baking spray and set it aside.
  • Add your sugar and eggs to a mixing bowl and mix for a couple of minutes until the eggs are frothy and the sugar is beginning to dissolve.
  • Next mix in your room temperature Dairy Free butter, vanilla, and bananas.
  • Add your dry ingredients and mix until they’re just combined, being careful not to over mix.
  • Fold in your nuts. You can use walnuts or pecans for this recipe.
  • Pour your batter into the prepared loaf pan and bake it for 30-40 minutes. The top will be lightly browned, and a toothpick should come out clean.
  • Allow the bread to cool completely.
  • To make your sauce, add your sugar, vanilla, Dairy Free butter, cinnamon, rum, and salt to a skillet over medium heat. Stir until the sugar is completely dissolved and the butter has melted.
  • Next add your bananas and walnuts and allow them to cook for 2 minutes. The bananas will slightly break down, and the sauce will thicken.
  • Toast slices of your cooled banana bread.
  • Top with that decadent sauce and serve it with your favorite Dairy Free ice cream. This is truly the stuff that dreams are made of!

Ingredients

Gluten Free Banana Bread

  • 2 1/3 cups Gluten Free 1.1 flour
  • 1 tbsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp kosher salt
  • 3 ripe bananas large
  • 1 1/3 cups sugar
  • 3/4 cups Dairy Free unsalted butter, room temperature
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped can substitute with pecans

Bananas Foster Topping

  • 2 tbsp Dairy Free butter
  • 1/4 cup brown sugar
  • pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped
  • 1 banana, sliced
  • 1/4 tsp cinnamon
  • 1/4 cup spiced rum

  • Dairy Free ice cream for serving

Instructions

Gluten Free Banana Bread

  • Preheat your oven to 375. Spray a loaf pan with nonstick baking spray and set aside.
  • Add your eggs and sugar to a mixing bowl and mix until and mix for a couple of minutes until the eggs are slightly frothy and the sugar is beginning to dissolve.
  • Mix in your bananas, vanilla, and butter.
  • Add the flour, cinnamon, salt, and baking powder and mix until just combined.
  • Fold in your nuts.
  • Pour your batter into the prepared load pan.
  • Bake for 30-40 minutes or until the top is lightly brown and a toothpick comes out clean.
  • Allow to cool completely.

Bananas Foster Topping

  • Add your rum, sugar, salt, cinnamon, vanilla, and butter to a skillet over medium heat.
  • Stir until the sugar is dissolved and the butter has melted.
  • Add the banana and nuts and allow them to cook for 2 minutes.

Gluten and Dairy Free Bananas Foster Banana Bread

  • Toast slices of your banana bread on both sides.
  • Top the banana bread with Dairy Free ice cream and spoon the bananas foster sauce over the top.
  • Enjoy!
