This Easy Strawberry Chia Jam is one of my favorite homemade toppings to keep in the fridge. I love it spooned over banana bread, overnight oats, and buttermilk biscuits, or used like a simple strawberry sauce over vanilla ice cream. It’s fresh, lightly sweet, and such an easy way to add something extra to breakfast, snacks, or dessert.

Keep this strawberry jam in the fridge for quick breakfasts, easy snacks, or simple desserts throughout the week. Use it on toast, biscuits, yogurt, oatmeal, pancakes, waffles, chia pudding, or ice cream whenever you want an easy homemade strawberry topping.

Ingredients

  • Strawberries – The recipe uses fresh berries. Frozen strawberries are a good alternative; you’ll just have to cook the mixture a little longer to remove excess liquid.
  • Maple syrup – The sweetener for this quick jam. Use pure maple syrup (not pancake syrup). Honey is a good option if you have it.
  • Chia seeds – These fiber-packed seeds turn this strawberry jam into something extra special. They also act as the thickener, replacing the pectin that’s normally used in jam.

How to Make Strawberry Chia Jam

  • 1 pinch salt
  • 3 tablespoons maple syrup (or honey)

Instructions
 

  • Add the sliced strawberries, water, and salt to a medium-sized pot. Cook over low to medium heat for about 10 minutes, stirring occasionally, until the strawberries soften and begin to break down.
  • Reduce the heat to low. Stir in the maple syrup, chia seeds, and vanilla extract.
  • Continue cooking for 5 to 8 minutes, stirring often, until the chia seeds thicken the mixture into a jam-like texture.
  • Remove from the heat and let the jam cool. Transfer to an airtight container and store in the refrigerator.
