When you start with a spice rub filled with layers of flavor, there’s no need for anything else to make your pork chops shine. For this recipe I am using Spiceology’s One Love. Made with honey granules, spices, turmeric, and dehydrated butter among other ingredients it’s a little sweet and a little savory. Just a quick season and the oven does the rest of the work.

Pureed sweet potato puree makes the perfect bed for these juicy chops. Coconut milk, another pantry staple, gives it the ultimate silky texture. Coconut milk also finds its way into the earthy poblano cream sauce that comes together with just a few simple and fresh ingredients.

The final element of this dish is the crunchy and vibrant slaw. Crisp jicama is combined with spicy radishes. A light and tangy dressing of lime and agave ties it all together.

How to Make Easy Spiced Pork Chops with Sweet Potato Puree

Both the slaw and the poblano cream sauce can be made ahead of time making this a great dish for meal prep or a busy weeknight.

Time needed: 40 minutes

Juicy pork chops, creamy sweet potatoes, and the crunch of a fresh slaw make this a delicious and complete meal.

  1. Pork Chops

    Preheat your oven to 375. Season your pork chops and drizzle them with olive oil. Bake them until you’ve reached your desired temp. I like to pull them at 145 which is about 20 minutes.

  2. Sweet Potato Puree

    Cook your sweet potatoes in your favorite method, whether it’s baking them or microwaving them. Remove the flesh from the skin and add to a bowl along with the coconut milk and salt. Mash until you’ve reached your desired consistency.

  3. Poblano Cream Sauce

    Add all of your ingredients for the cream sauce to a blender and blend until smooth.

  4. Jicama Slaw

    Add all of the ingredients for the slaw to a bowl and mix to combine.

  5. Plate it Up

    Spread the puree on the bottom of the plate. Top with a pork chop. Add the jicama slaw to the pork chop. Finish with the poblano cream sauce.

Top Tip

Ingredients

Spiced Pork Chops

Poblano Sauce

  • 1 poblano, seeds and stem removed
  • 1 tsp garlic
  • pinch of salt and pepper
  • 2 tbsp coconut milk

Sweet Potato Puree

  • 2 sweet potatoes
  • 1/4 cup coconut milk
  • 1/2 tsp kosher salt

Jicama Slaw

  • 1 cup jicama, julienned
  • 1/4 cup radish, julienned
  • juice of 2 limes
  • 1 tsp agave syrup can replace with honey
  • pinch of salt and pepper

Instructions

Spiced Pork Chops

  • Preheat oven to 375. Season both sides of the pork chops with salt and One Love. Drizzle with olive oil and place into a baking dish.
  • Bake until you reach your desired temperature. I like to pull mine at 145 degrees and allow them to rest for 10 minutes.

Poblano Sauce

  • Add all of the ingredients to a blender and blend until smooth.

Sweet Potato Puree

  • Cook your potatoes your favorite way, such as baking or microwaving.
  • Scoop the flesh from the skin and add to a bowl along with the coconut milk and salt. Mash until smooth and creamy.

Jicama Slaw

  • Add all of the ingredients to a bowl and mix to combine. Allow to sit for at least 10 minutes before serving.
