The Tuscan in Dairy Free Creamy Chicken Sausage Tuscan Soup

There are so many variations of Tuscan soup, or zuppa Tuscana, out there. I think we all know we can thank the place with the endless breadsticks and bottomless bowls of salad for making this bowl of pure comfort popular.

While there are so many variations, there does seem to be certain ingredients that are required to earn that Tuscan soup label. First, there needs to be some sort of sausage. For this soup I am using chicken sausage. It brings tons of flavor with the added benefit of making this soup healthier and lighter.

Next up on the list are potatoes. Some use traditional baking potatoes or russets, I like to use red potatoes. Their creamy flesh absorbs the flavorful broth while the red skin adds color and texture.

Last but most importantly in Dairy Free Cream Chicken Sausage Soup is the kale. Or as my husband calls it, the green stuff. I know kale can be polarizing. People either love it or think it’s some sort of punishment. However once you try kale cooked in the a rich and savory broth perfumed with sausage drippings and savory salty pancetta, you will change your mind. For this recipe I am using purple kale for both color, and also it’s deeper flavor.

This Dairy Free Creamy Chicken Sausage Tuscan Soup gives you all of the luxuriousness of a creamy soup without the guilt. For this recipe I am using Silk creamer. Unlike some creamy soups, there is no need to make a roux to thicken it, which also keeps it Gluten Free.

From sautéing the chicken sausage and cooking the onions and garlic in the flavorful drippings to the bright pop of white wine to deglaze, this soup comes together in less than an hour. It’s perfect for a hearty lunch or light dinner, but also makes a great meal prep item. Soup only gets better the next day after all.

Dairy Free Creamy Chicken Sausage Tuscan Soup

This creamy and savory Dairy Free Creamy Chicken Sausage Soup is the perfect lunch or light dinner.

Equipment

  • Stock Pot

Ingredients

  • 1 lbs Italian chicken sausage
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 tbsp garlic, chopped
  • 4 cups purple kale, chopped
  • 1 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup white wine
  • 6 cups chicken stock
  • 1 cup Dairy Free cream
  • 4 red potatoes, cubed
  • 8 oz pancetta

Instructions

  • In a stock pot over medium heat, add olive oil and sausage. Sauté until the sausage is browned.
  • Deglaze the pan with wine. Allow to cook 2-3 minutes.
  • Add your onion and garlic. Sauté for 2-3 minutes.
  • Add the rest of your ingredients, except for the cream. Allow to come to a simmer and cook until the potatoes are tender and the kale is wilted, approximately 30 minutes.
  • Stir in your cream and allow to heat through. Serve and enjoy!

Notes

I use dairy free cream in this recipe but you can replace with dairy cream.
Pork sausage and turkey sausage also work well in this dish.
