  • 12 oz sour cream
  • 2 eggs
  • 1 egg yolk
  • 1 ¼ cup sugar
  • 2 tsp vanilla extract high-quality for stronger flavor

  • 8 oz dark chocolate chips
  • ¾ cup heavy cream
  • 1 cup cookie dough

Preparing the Crust:

  • Line a 9” round x 3” deep springform pan with parchment paper and place it on a cookie sheet for baking.
  • Press the cookie dough mixture evenly along the bottom and sides of the pan.
  • Place in the fridge while preparing the filling.

Making the Cheesecake Filling:

  • Preheat the oven to 325°F.
  • In a food processor, blend cream cheese, sour cream, eggs, vanilla extract, and sugar until smooth.
  • Pour the mixture into the prepared crust.
  • Cube the cooked brownie into 1” pieces and gently place them into the cheesecake batter.
  • Drizzle ½ cup caramel on top of the brookies before baking.
