How to Make Cornbread Cake

Ingredients
Cornbread Cake
- 2 cups all-purpose flour (or 1:1 gluten-free flour)
- 1 cup fine yellow cornmeal
- 1 tsp kosher salt

- 3 room temperature eggs

- 2 tbsp heavy cream or milk
- 3 1/2 cups powdered sugar
- 2 tsp vanilla extract

Instructions
Make the Cornbread Cake
- Preheat the oven to 350°F. Spray two 8-inch round cake pans with nonstick baking spray. Alternatively, prepare a 9×13-inch baking dish.
- Add the sugar and vegetable oil to a large mixing bowl. Mix for 3 minutes.
- Add the eggs one at a time, mixing after each addition. Mix in the milk, sour cream, and vanilla extract.
- In a separate bowl, whisk together the flour, cornmeal, kosher salt, and baking powder.
- Add the dry ingredients to the wet ingredients and mix just until combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely before frosting.
Make the Honey Vanilla Frosting
- Add the room-temperature butter to a mixing bowl and whip for 2-3 minutes until creamy.
