Carrot cake has always been one of those desserts where, for me, the cream cheese frosting is just as important as the cake. 😂 So when I started thinking about carrot cake ice cream, I knew I wanted that same combination happening here.

Instead of just making a carrot-flavored ice cream, I make soft carrot cake cookies, chop them up, and fold them into a creamy cream cheese ice cream base. You get the warm cinnamon and spice, little bites of carrot cake, and that tangy cream cheese flavor all in one scoop.

And because apparently that wasn’t enough, I finish the whole thing with caramel sauce. It gets a little chewy once frozen and is SO good with those soft cookie pieces.

This one takes a little more time than a no-churn ice cream, but it’s absolutely worth it.

Tips for the Best Carrot Cake Ice Cream

  • Don’t boil the custard. Keep the heat low and stir constantly, making sure you get into the corners of the pot. This helps prevent the eggs from scrambling.
  • Temper the egg yolks slowly. Gradually adding the warm cream mixture brings the eggs up to temperature without cooking them. Whisk constantly as you add the warm liquid.
  • Chill the ice cream base completely. Don’t rush this part. The custard should be completely cold before it goes into your ice cream maker. A cold base churns and freezes much better than a warm one.

  • Drizzle the ¼ cup caramel sauce over the ice cream. Gently swirl some of the caramel through the top without completely mixing it in.
