- Cook for 20 minutes, breaking down the cherries slightly.
- Transfer to a bowl and let it cool completely.


- In a mixing bowl, combine the sugar, orange juice of one orange, and egg yolks. Beat on high for about 5 minutes or until pale yellow and fluffy. This should be meringue like in texture.

- In a separate bowl, beat the heavy cream until it form into whipped cream. Once firm, add to the mascarpone/cream cheese. Mix until combined. (When this whipped cream is added to cream cheese or mascarpone, it creates a mixture that is mostly firm and stable).

- Fold the egg mixture and half of the pitted cherries into the cream cheese mixture. Set aside.


- In another bowl, combine the orange juice, water, and orange liqueur.
- Dip the ladyfingers into the orange mixture and line the bottom of the baking dish.
- Spread half of the cherry jam on top of the ladyfingers.

What do you do with the other half of the pitted fresh cherries? Half goes into the custard…but there isn’t any step that uses the rest….
