Ingredients
Crust
1
cup
butter
melted
⅓
cup
sugar
1 ¾
cup
1.1 GF flour
Pinch
of salt
1 ½
tsp
vanilla extract
Filling
1 1/2
cup
lemon juice
2
tbsp
lemon zest
½
cup
1.1 GF flour
1 ¾
cups
sugar
6
eggs
room temperature
*2 tbsp powdered sugar for dusting when finished baking & cooled
Instructions
Crust
Preheat the oven to 350 degrees.
Spray a 9x13 baking dish with nonstick baking spray and line the dish with parchment paper.
If it comes over the sides, it will be easier to remove.
Add all the ingredients for the crust to a bowl, mix well and press down into the base of the baking dish.
Bake for 15-18 minutes until lightly golden brown.
Remove, reduce the oven temp to 325 degrees and go to the next
Filling
In a mixing bowl add all the ingredients and mix for 3 minutes on medium speed.
Pour on top of the crust and bake for 24-26 minutes, the edges will be slightly golden brown.
Remove, let sit at room temp for 1 hr. and place in the fridge for 6 hrs. to setup.
Dust with powdered sugar and enjoy!
