Lemon Bars

Lemon bars are a delightful combination of tangy and sweet flavors that are delicious. The buttery shortbread crust adds a delightful texture, while the luscious filling is truly irresistible.

Equipment

Ingredients

Crust

  • 1 cup butter melted
  • cup sugar
  • 1 ¾ cup 1.1 GF flour
  • Pinch of salt
  • 1 ½ tsp vanilla extract

Filling

  • 1 1/2 cup lemon juice
  • 2 tbsp lemon zest
  • ½ cup 1.1 GF flour
  • 1 ¾ cups sugar
  • 6 eggs room temperature
  • *2 tbsp powdered sugar for dusting when finished baking & cooled

Instructions

Crust

  • Preheat the oven to 350 degrees.
  • Spray a 9x13 baking dish with nonstick baking spray and line the dish with parchment paper.
  • If it comes over the sides, it will be easier to remove.
  • Add all the ingredients for the crust to a bowl, mix well and press down into the base of the baking dish.
  • Bake for 15-18 minutes until lightly golden brown.
  • Remove, reduce the oven temp to 325 degrees and go to the next

Filling

  • In a mixing bowl add all the ingredients and mix for 3 minutes on medium speed.
  • Pour on top of the crust and bake for 24-26 minutes, the edges will be slightly golden brown.
  • Remove, let sit at room temp for 1 hr. and place in the fridge for 6 hrs. to setup.
  • Dust with powdered sugar and enjoy!
