Streusel Sweet Potato Casserole

Savory and warm spiced sweet potatoes are topped with a buttery oat streusel topping.

  • 1 7"x10" baking dish

Ingredients

Streusel Topping

  • 5 tbsp butter, room temperature
  • 1/2 cup oats
  • 3/4 cup brown sugar
  • pinch of pepper
  • 1/8 tsp cinnamon
  • 1/8 tsp cardamom
  • 1/4 tsp salt
  • 1 cup pecans, chopped
  • 1/2 cup Gluten Free 1.1 Flour

Sweet Potatoes

  • 5 sweet potatoes 4-5 cups
  • 1/2 cup milk
  • 3/4 tsp kosher salt
  • a couple of dashes of ancho chili powder
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/3 cup brown sugar
  • 4 tbsp butter

Instructions

  • Preheat the oven to 325 degrees. Spray a 7x10 baking dish with nonstick baking spray and set aside.
  • Use a fork to poke holes in your sweet potatoes. Microwave them until they are fork tender.
  • Allow the sweet potatoes to cool enough to handle.
  • Once cooled. Remove from the skin and transfer to a bowl. Add the remaining ingredients to a bowl and mix until smooth and creamy.
  • Pour into the prepared baking dish.
  • Add all of the ingredients for the streusel topping to a bowl.
  • Use a fork to mash the ingredients together until they are combined and crumbly.
  • Sprinkle the streusel topping all over the top of the sweet potatoes.
  • Bake the casserole for 45-60 minutes or until it's golden brown and bubbly.
  • Enjoy!
