- 1/2 cup oats
- 3/4 cup brown sugar
- pinch of pepper
- 1/8 tsp cinnamon
- 1/8 tsp cardamom
- 1/4 tsp salt
- 1 cup pecans, chopped
- 1/2 cup Gluten Free 1.1 Flour
Sweet Potatoes
- 5 sweet potatoes 4-5 cups
- 1/2 cup milk
- 3/4 tsp kosher salt
- a couple of dashes of ancho chili powder
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1/3 cup brown sugar
- 4 tbsp butter
Instructions
- Preheat the oven to 325 degrees. Spray a 7×10 baking dish with nonstick baking spray and set aside.
- Use a fork to poke holes in your sweet potatoes. Microwave them until they are fork tender.
- Allow the sweet potatoes to cool enough to handle.
- Once cooled. Remove from the skin and transfer to a bowl. Add the remaining ingredients to a bowl and mix until smooth and creamy.
- Pour into the prepared baking dish.
- Add all of the ingredients for the streusel topping to a bowl.
- Use a fork to mash the ingredients together until they are combined and crumbly.
- Sprinkle the streusel topping all over the top of the sweet potatoes.
- Bake the casserole for 45-60 minutes or until it's golden brown and bubbly.
